If you’re relatively new to cooking and baking for special dietary needs, you may feel overwhelmed by having to learn a whole new set of “standard or common” ingredients and how they work. In the event you’ve been at this for a while, you are likely now more well-versed in food science than you ever expected to be. When we first started out on our keto adventure many years ago, Scar and I thought we could off-road in our cooking the same way we did before. Ha ha. The joke was on us. The rules had changed and we had a whole new set of chemistry to learn.
