Secret Weapon Savory Cheesecake Bites

These Savory Cheesecake Bites are the perfect addition to your appetizer spread. Easily elegant or simply versatile, they’re sure to be a hit. Naturally gluten free and low carb, they’re a great way to handle a variety of dietary restrictions.

Ingredients

  • ¾ cup Unsweetened Almond Milk Or milk of your choice
  • ½ cup Secret Weapon Foods All-Purpose Plain Baking Mix
  • ½ teaspoon Salt
  • ¼ teaspoon Ground Black Pepper
  • ¼ teaspoon Cayenne
  • 2 Eggs Jumbo
  • 16 ounces Cream Cheese Cut into 1-inch pieces and softened
  • 1 cup Swiss Cheese Shredded. 4 ounces // 113 grams
  • ¼ cup Parmesan Cheese Grated. 1 ounce // 28.35 grams
  • ¼ cup Green Onions Sliced

Instructions

  • Spray 2-quart baking dish with nonstick cooking spray and preheat the oven to 350°F.
  • In a high speed blender, combine the Unsweetened Almond Milk, All Purpose Baking Mix, Salt, Pepper, Cayenne, and Eggs. Blend on high speed for 15 seconds.
  • Add the Cream Cheese and blend for 2 more minutes.
  • Add the Swiss Cheese, Parmesan Cheese, and Green Onions. Pulse until just combined and pour the mixture into the prepared baking dish.
  • Bake at 350°F for 40 – 45 minutes or until a knife inserted in the center comes out clean.
  • Allow it to cool for 30 minutes. Serve warm or at room temperature.

  • 8×8-inch Casserole Dish 2-quart
  • High Speed Blender
  • Measuring Cups
  • Measuring Spoons
  • Silicone Jar Scraper
  • Kitchen Shears These are to cut the green onions. You could also use a knife cutting board.
  • Rimmed Baking Sheet
  • Nonstick Cooking Spray

Notes

Need some ideas?
  • Add the wedges to your cheese and charcuterie board.
  • Artfully arrange them on a tray to stand alone as an appetizer.  
  • Eat them as a snack or with breakfast or lunch. 
  • Instead of cutting them into triangles, use a cookie cutter to make circles (think 3-inch diameter) and top with a dab of tomato jam.  
    • The savory cheesecake round with tomato jam could be a fun April Fool’s Day “Dessert” in place of traditional cheesecake and strawberry topping.
