Ingredients
- 2 cups Secret Weapon Foods Savory Baking Mix 226 grams
- ⅓ cup Parmesan Cheese Grated (40 grams)
- ¼ teaspoon Cayenne
- ⅔ cup Mayonnaise Divided: ⅓ cup into the batter, ⅓ cup for spreading on the baked biscuits
- ¼ cup Unsweetened Almond Milk
- 4 Roma Tomatoes Large. Cut into 8 slices.
- 10 slices Bacon Crisply Cooked and Crumbled
- Green Onions Thinly Sliced. Optional.
Instructions
- Cook bacon. Drain, crumble, and set aside.
- Preheat the oven to 425°F. Line 2 rimmed baking sheets with parchment paper and spray with nonstick cooking spray.
- Slice 4 Roma Tomatoes into 8 slices each. Set aside.
- In a large mixing bowl combine the baking mix, parmesan cheese, cayenne, mayonnaise, and unsweetened almond milk until well combined and a dough has formed.
- Roll out the dough between two sheets of parchment paper to ¼-inch thickness. Cut with a small round cookie or biscuit cutter (approximately 1 ¾-inches).
- Bake at 425°F for 8 to 10 minutes or until golden brown. Cool for 15 minutes on a cooling rack.
- Spread each biscuit lightly with the remaining Mayonnaise. Place a Tomato Slice on top of each biscuit, followed by crumbled Bacon and thinly sliced Green Onions if desired.
