Secret Weapon Savory Tomato Bacon Biscuit Bites

A delicious addition to your appetizer spread, these Savory Tomato Bacon Biscuit Bites look great and taste even better.

Ingredients

  • 2 cups Secret Weapon Foods Savory Baking Mix 226 grams
  • ⅓ cup Parmesan Cheese Grated (40 grams)
  • ¼ teaspoon Cayenne
  • ⅔ cup Mayonnaise Divided: ⅓ cup into the batter, ⅓ cup for spreading on the baked biscuits
  • ¼ cup Unsweetened Almond Milk
  • 4 Roma Tomatoes Large. Cut into 8 slices.
  • 10 slices Bacon Crisply Cooked and Crumbled
  • Green Onions Thinly Sliced. Optional.

Instructions

  • Cook bacon. Drain, crumble, and set aside.
  • Preheat the oven to 425°F. Line 2 rimmed baking sheets with parchment paper and spray with nonstick cooking spray.
  • Slice 4 Roma Tomatoes into 8 slices each. Set aside.
  • In a large mixing bowl combine the baking mix, parmesan cheese, cayenne, mayonnaise, and unsweetened almond milk until well combined and a dough has formed.
  • Roll out the dough between two sheets of parchment paper to ¼-inch thickness. Cut with a small round cookie or biscuit cutter (approximately 1 ¾-inches).
  • Bake at 425°F for 8 to 10 minutes or until golden brown. Cool for 15 minutes on a cooling rack.
  • Spread each biscuit lightly with the remaining Mayonnaise. Place a Tomato Slice on top of each biscuit, followed by crumbled Bacon and thinly sliced Green Onions if desired.

  • 2 Wire Rack Insert for Rimmed Baking Sheet For cooking the bacon
  • Rubber Scraper
  • Tongs For turning the bacon while cooking
  • Parchment Paper
  • Rolling Pin
  • Cookie or Biscuit Cutter Round. Approximately 1 ¾-inches.
  • Nonstick Cooking Spray
