This Broccoli Caesar Salad is a crave-worthy side dish made with roasted broccoli, shaved Parmesan, Asiago, and Romano cheese, and Caesar dressing topped with crunchy Keto Garlic Pepper Croutons. Incredibly delicious and easy to make, you’ve got to add this to the menu for your next dinner party or really any night of the week.
Trim 32 ounces Broccoli Florets into bite size pieces and place in a zip top bag. Add 1 teaspoon Garlic Powder, 1 teaspoon Ground Black Pepper, and 1 teaspoon Kosher Salt. Seal and shake the bag to coat. Then add 2 tablespoons Avocado Oil to the bag, seal it again and shake to coat.
Line a rimmed baking sheet with aluminum foil and preheat the oven to 425°F. Spread out the broccoli on the baking sheet and roast at 425°F for 15 to 20 minutes (depending on your desired level of browning).
Remove the broccoli from the oven. Drizzle with ½ cup Caesar Dressing (or an amount to your taste) and toss with tongs to distribute the dressing evenly. (If you prefer you can leave the dressing, cheese, and croutons on the side and allow guests to assemble as they wish.)

Move the broccoli to a serving dish and allow it to cool for about 10 minutes before topping and further tossing with 3 ounces Asiago Romano Parmesan Cheese Blend (shaved cheese) and 4 ounces Keto Garlic Pepper Croutons (see Recipe Notes).

Keto Garlic Pepper Croutons
If you are not keeping this low carb, you can just use regular croutons.

Line a rimmed baking sheet with aluminum foil and preheat the oven to 250°F.
Cube 8 ounces of Keto Bread into roughly 1-inch cubes and place them in a zip top bag.
Add 2 teaspoons Garlic Powder and 1 teaspoon Ground Black Pepper (or to taste) to the bag, seal, and shake to coat.
Drizzle approximately 3 tablespoons of Olive Oil (you can use Extra Virgin if you like) into the bag, 1 tablespoon at a time. Seal the bag and shake to coat between each addition.
Spread the bread cubes on the lined rimmed baking sheet and bake at 250°F for 20 minutes. Then toss them and bake for another 20 minutes. They should be dried and firm.
