Made with unsweetened coconut milk, heavy cream, chia seeds, and juicy blueberries, these Creamy Keto Fruit Popsicles are a delicious way to stay refreshed in the heat (or anytime)!

Instructions
In a medium saucepan, combine ½ cup Chia Seeds, ¾ cup Heavy Cream, and 13.5 ounces Full-Fat Unsweetened Coconut Milk, ½ cup Powdered Erythritol, and ¼ teaspoon Kosher Salt. Whisk thoroughly to eliminate lumps of chia seeds.

Allow it to sit for 5 minutes. Then whisk again to break up any clumps. Allow it to sit for 10 more minutes. Then whisk again.
Place the saucepan over low to medium heat and bring the mixture to a simmer. Stir for 20 minutes. It will and should be very thick.
Remove it from the heat and allow it to cool for 15 minutes. Then stir in ¾ cup Blueberries until they are evenly distributed.

Spoon the mixture into the silicone popsicle molds and place in the freezer for 1 hour.
Remove from the freezer and insert the popsicle sticks. Return to the freezer for at least 6 hours or overnight.
