This hearty Ham, Veggie, and Chevre Scramble is packed with flavor and makes a great breakfast for a crowd. Made with a variety of veggies, this dish also has the added benefit of being easy to adapt to accommodate several dietary restrictions.
4cupsBroccoli FloretsChopped into bite-sized pieces
16ouncesBaby Bella MushroomsSliced. White button mushrooms will work too.
½cupRoasted Red Pepper StripsI used the ones in the jar that are already julienned.

½cupSour Cream
¾cupChevreGoat Cheese
2teaspoonsKosher Saltto taste

Chop 4 cups Broccoli Florets, slice 16 ounces Baby Bella Mushrooms, and dice 1 pound Ham. (If you are getting ready for a party, I would suggest doing this 1 - 2 days in advance and storing them in zip top bags in the fridge.)
In a large sauté pan or skillet, heat 2 - 3 tablespoons Avocado Oil or Olive Oil over medium high heat. Add in your 4 cups Broccoli Florets, 16 ounces Baby Bella Mushrooms, and ½ cup Roasted Red Pepper Strips. Cook until the mushrooms and broccoli are tender. About 10 - 15 minutes.

While the veggies are cooking, beat your 12 Eggs in a large mixing bowl. Then beat in your ½ cup Sour Cream and ¾ cup Chevre until combined. Then stir in your 2 teaspoons Kosher Salt, 1 teaspoon Pepper, and 1 teaspoon Chipotle Powder.

Add your 1 pound Ham to the veggies and heat. About 2-3 minutes.

Pour your egg, sour cream, and cheese mixture into the pan with the veggies. Allow the egg to cook, stirring periodically.
Serve immediately, perhaps with a few extra crumbles of goat cheese on top.
