Instructions
Grease an electric griddle or flat griddle pan with 1 tablespoon Avocado Oil and set it to heat, targeting 350°F surface temperature.

In a medium mixing bowl, whisk 1 cup Heavy Cream and 2 Eggs (jumbo) until completely combined. Mix in 1 teaspoon Vanilla Extract (see Recipe Notes for alternative suggestions).

Lay 8 slices Keto Bread into a large shallow dish. (If using a 9x13-inch dish, I have to double layer 2 of the slices.) Pour half the egg and cream mixture over the bread slices, then flip the slices and pour the remaining mixture over them. Use a spatula to spread the mixture evenly. I flip my slices a couple of times for even coating.

Once the griddle is hot (a tiny drop of water will sizzle), place a batch of coated bread slices on the surface and cook until just golden brown. (About 4 minutes on my griddle.) Flip the slices and cook until golden brown on the other side as well.
Remove finished slices to a warm plate and cover with a tea towel or place in a warm oven until ready to serve. Add a little additional Avocado Oil to the griddle if / as needed and cook the next batch.
Serve with optional toppings such as Butter, Sugar Free Maple Syrup, Whipped Cream, Assorted Berries, Chopped Nuts, etc.

Alternative Flavors - Play around with whatever flavor suits your fancy. Here are some of my favorites:
Banana - Add 1 teaspoon Banana Extract and ½ teaspoon of Vanilla Extract
Cinnamon - Add ½ teaspoon Cinnamon Extract and 1 teaspoon of Vanilla Extract
Pineapple - Add 1 teaspoon Pineapple Extract
Apple Pie - Add 1 teaspoon Green Apple Extract and ½ teaspoon Baking Spice Blend
Latte - Add 1 teaspoon Almond Extract and ½ teaspoon Coffee Extract

I use store-bought keto bread because it suits my needs. You could also use your favorite regular bread, gluten free bread, or make your own low carb alternative.
