Heat 1 tablespoons Avocado Oil in a large sauté pan over medium high heat. Cook 32 ounces Fresh Spinach until it is just wilted. About 2-3 minutes. Add in 1 teaspoon Kosher Salt, 1 teaspoon Ground Black Pepper, 1 tablespoon Garlic (minced), and the chopped Artichokes and sauté for another 30 - 60 seconds or until fragrant.
Pour in 1 cup Heavy Cream. Stir until it just begins to thicken. About 5 minutes. Add in 6 ounces Pepper Jack Cheese (chopped or shredded) and stir until it is melted and fully incorporated.
