These Spiced Cookie Balls are the perfect blend of spicy (the baking spice kind) and sweet with the crunch of pecans and the unctuousness of almond flour.

Spiced Cookie Balls

Perfectly sweet with the right blend of baking spices, there Spiced Cookie Balls are always a crowd pleaser! They also just happen to be vegan and gluten free.

Ingredients

  • 2.5 cups Dinner Party Diaries Pumpkin Spice Muffin Ball Mix 284 g
  • ½ teaspoon Orange Peel Powder 4 g
  • 4 grams Psyllium Husk Powder
  • 2 grams Freshly Grated Nutmeg
  • ⅔ cup Unsweetened Almond Milk 160 g
  • 2 tablespoons Shortening
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Almond Extract
  • 1 cup Pecans, Chopped 120 grams Chopped
  • 1 cup Powdered Sugar Or powdered sweetener of choice

Prevent your screen from going dark

Instructions

  • Combine all ingredients except the Powdered Sugar or Sweetener of your choice and mix until a dough forms.
  • Chill in the fridge for at least 1 hour.
  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Roll into balls and place on prepared baking sheet.
  • Bake at 350°F for 10 – 15 minutes or until golden brown on the bottom.
  • Remove from the oven and allow them to cool completely.
  • Once cooled, roll each cookie ball in powdered sweetener of your choice.
