When I think about brunch, I typically bucket recipes into two broad categories–brunch for a crowd vs. brunch for 2-4 people. This can come in particularly handy if you have guests staying with you over the holidays.
While I often enjoy making the “brunch for a crowd” version for the two of us and then having leftovers for later in the week, the inverse idea does not work as well. i.e. It is not always easy to scale up a “brunch for two” to feed a larger group in a timely manner.
Take French Toast, for example. If you’re cooking for say six or more people, and trying to cook French Toast on a stovetop or griddle, you’re going to encounter space challenges and it’s going to take forever to get breakfast on the table. On the other hand, if you make a French Toast Casserole, you can prepare it the night before. Then you can just bake or heat it through in the morning. Okay, it might not be forever, but it’s an unnecessary amount of time in which it can feel like everyone is waiting for you to finish.
