I don’t know about where you are, but here it’s “County Fair” time of year. Corn Dogs are one of many things that I consider quintessential Fair Food. Unfortunately, the usual version doesn’t really pass as low carb in any way, shape or form. Fortunately, these Keto Almond Flour Corn Dog Bites provide a lip-smacking, keto alternative. Fair Food concept aside, these awesome little bites make a fantastic appetizer or finger food for any dinner party or game day spread.
The Inspiration / Component Recipes
One of the things that I have found the most challenging about recipe writing is figuring out the best way to share the information when what I’ve done is taken 2 or more recipes from others and combined them in a new way. A lot of my regular cooking long before the Dinner Party Diaries was even an idea involved mixing and matching parts of recipes or figuring out how to adapt a recipe for a specific dietary need on my guest list.
In this particular case, I’d seen All Day I Dream About Food’s recipe for Keto Corn Dog Bites and started craving them. What better time to make them than as cute little appetizers for a casual dinner party. (Cue my Easy Summer Pork Dinner Party). However, there was a fundamental flaw in this plan. The original recipe calls for coconut flour and we had a coconut allergy to avoid. Unwilling to give up, I thought back to an absolutely delicious Keto Cornbread recipe from The Big Man’s World that I’d made for my Mardi Gras Dinner Party. (This was the recipe in which I was first clued into the fact that Sweetcorn Extract exists and is awesome!)
My solution was to use the almond flour based Keto Cornbread recipe with the method from the Keto Corn Dog Bites recipe. The outcome was success.
I will tell you that I doubled both of the recipes because I needed a large batch. Doubled, the Keto Cornbread recipe makes more than enough batter for the corn dog bites, so I got a bonus of an extra mini (6-inch) cornbread to munch on.
What You Need to Make Keto Almond Flour Corn Dog Bites
Equipment
- Cutting Board – For slicing the hot dogs.
- Chef’s Knife – For slicing the hot dogs.
- Large Mixing Bowl
- Stand Mixer or Hand Mixer / Whisk and Another Large Mixing Bowl – All of these options will work. I used my stand mixer due to the volume of eggs I was working with.
- Rubber Scraper
- Disposable Zip Top Bag or Piping Bag – I use a gallon size zip top bag with one corner tip cut off for piping the batter into the mini muffin pans. Since this recipe makes 48 and I’m frequently in a hurry, standing there and spooning it in just isn’t in my Time Budget.
- 2 Mini Muffin Pans – I use silicone ones.
- Parchment Paper Mini Cupcake Liners – I still used these and sprayed them with cooking spray.
- Cooking Spray – Don’t skip this no matter what kind of mini cupcake pan you use.
Ingredients
- Hot Dogs – I used the regular sized ones, not “bun size”. I also just used regular BallPark Hot Dogs. However, feel free to get adventurous and change it up.
- Almond Flour
- Baking Powder
- Powdered Erythritol
- Eggs
- Unsalted Butter
- Sweetcorn Extract – I think this stuff is absolutely awesome and it smells yummy. There will be more recipes with this ingredient to be sure.
Getting Started with Making Keto Almond Flour Corn Dog Bites
Start by cutting the hot dogs into 6 equal pieces and then set them aside.
Line the mini muffin pans with parchment paper liners. This recipe is for 48 corn dog bites. However, you could easily stretch this to make more if you have more hot dogs and more mini muffin pans. (I ran out of silicone mini muffin pans and didn’t have time to dig out my older non-stick metal ones.)
Making the Keto Cornbread
Follow the instructions as written in the Keto Cornbread recipe on The Big Man’s World but double them for this use case.
Sift the almond flour and baking powder in a large bowl. In the stand mixer (or with a hand mixer or whisk), beat the eggs. Add in the melted butter, powdered erythritol, and sweetcorn extract. Once thoroughly mixed, add in the almond flour and baking powder.
Once everything is combined, pour or ladle the batter into a gallon zip top bag or pastry bag.
Assembling the Bites
Line 2 mini muffin sheets with parchment paper liners and spray them with cooking spray. Fill each well with batter about ⅔ of the way full. Press one hot dog piece into each filled well. Top up the batter on any that look low after the displacement is complete.
Spray a small baking dish with more cooking spray and fill it with the remaining batter. I suggest a 5 ½ to 6 inch round dish.
Bake at 350°F for 20 – 25 minutes. You should just start to see a golden brown color around the edges of the bites. The bonus cornbread might take an extra minute or so. Just keep an eye on it. A toothpick inserted in the center should come out clean.
Serve warm with mustard, sugar free ketchup, or another dipping sauce of your choice.

Keto Almond Flour Corn Dog Bites
Ingredients
- 8 Hot Dogs Each cut into 6 pieces.

Instructions
- Cut each hot dog into 6 equal pieces and set them aside.8 Hot Dogs
- Make a double batch of the batter for Keto Cornbread (see Notes for link) following the instructions as written (including the sifting step), but stop before pouring it into a pan to bake.2 recipes Keto Cornbread Batter
- Then follow the instructions for Keto Corn Dog Bites (see Notes for link) for assembly. Line 2 mini muffin pans with parchment paper liners and spray them with cooking spray.
- Pour the batter into a zip top bag and snip off the top of one corner. Pipe the batter into each mini muffin well until it is ⅔ full. Then press a hot dog piece into each well. Top up any mini muffin wells that still have space.
- Bake at 350°F for 20 – 25 minutes or until you just start to see golden brown around the edges.
