Keto Berry Cobbler Muffins

I was looking for a keto berry cobbler dessert that didn’t use any coconut flour.  Certainly not an impossible task, but one that required a little bit of looking.  Preferably, I wanted one that wasn’t going to be a lot of work.  As usual, my Time Budget was limited so I couldn’t choose something that was likely to turn into a baking rabbit hole for me.  In the end I landed on taking this Keto Peach Cobbler Muffin recipe from All Day I Dream About Food and swapping out the peaches for some blueberries and cut up strawberries.

My exact changes are detailed below.  Otherwise, I stuck with the recipe as written.  

What You Need to Make Keto Berry Cobbler Muffins

Equipment

  • Cutting Board – For chopping the strawberries. 
  • Chef’s Knife – For chopping the strawberries.
  • Medium Mixing Bowl – For assembling the streusel topping. 
  • Large Mixing Bowl and Whisk or Hand Mixer or Stand Mixer
  • Sieve or Fine Mesh Strainer – For sifting the dry ingredients.  
  • Measuring Cups
  • Measuring Spoons
  • Rubber Scraper
  • 2 Regular Size Muffin Pans
  • Muffin Sized Parchment Liners (optional) – I just used a silicone muffin pan sprayed with cooking spray.  
  • Cooking Spray

Ingredients

  • Keto Peach Cobbler Muffins (minus the peaches and peach extract)
    • Swerve Brown or Sukrin Gold
    • Unsalted Butter
    • Sour Cream
    • Eggs – As usual, the recipe calls for large.  I use jumbo. 
    • Vanilla Extract
    • Almond Flour – I did sift it for both the streusel topping and the batter.  
    • Granulated Erythritol
    • Whey Protein Powder – I sifted this along with the Almond Flour.
    • Baking Powder – I sifted this too. 
    • Kosher Salt
  • Fresh Blueberries
  • Fresh Strawberries
  • Strawberry Extract

My Modifications

Follow the instructions as written in this Keto Peach Cobbler Muffin recipe with the following two changes: 

  • In place of 2 cups of finely chopped Peaches, use 1.5 cups Blueberries and 0.5 cups chopped Strawberries.  
  • In place of ½ teaspoon of Peach Extract, use ½ teaspoon of Strawberry Extract.  

That’s it.

Ingredients

  • 1.5 cups Fresh Blueberries
  • 0.5 cups Fresh Strawberries Chopped
  • ½ teaspoon Strawberry Extract

Instructions

  • Chop ½ cup Fresh Strawberries and mix with 1.5 cups Fresh Blueberries.
    1.5 cups Fresh Blueberries, 0.5 cups Fresh Strawberries
  • Make 1 recipe of Keto Peach Cobbler Muffins but (1) replace the called for peaches with the Fresh Strawberries and Blueberries and (2) replace the ½ teaspoon Peach Extract with ½ teaspoon Strawberry Extract (See Notes for Link)
