Who says that pancakes need to be sweet? These Savory Griddle Cakes are incredibly versatile for appetizers, snacks, sides, or even the entrée.

Ingredients
- 1 cup Secret Weapon Foods Savory Baking Mix
- ½ cup Unsweetened Almond Milk
- 1 tablespoon Avocado Oil plus more for cooking surface
- 1 Egg Jumbo

- 1 cup Unsweetened Almond Milk
- 2 tablespoon Avocado Oil plus more for cooking surface
- 2 Eggs Jumbo
Instructions
- Heat griddle and lightly grease with Avocado Oil.
- Combine all ingredients until a pourable batter forms.
- Once the griddle is heated (a small drop of water should sizzle), pour the batter onto the surface in approximately 3-inch circles (or sized as you like).
- Cook on one side until they begin to slightly puff and the exposed side starts to solidify.
- Flip and cook until golden brown on both sides.

Need some ideas?
- Top each Savory Griddle Cake with a dallop of sour cream and a bite of smoked salmon. Make the Savory Griddle Cakes a little smaller than you normally might and you’ll have elegant little appetizers.
- Serve them with thick-cut bacon and maple syrup or your sugar free syrup of choice. It can be a slight twist on “breakfast for dinner.” The sweet and savory make a great combo.
- Top them with some slices of corned beef, sauerkraut, and dressing.
- Cube up some leftover turkey to place on top of the Savory Griddle Cakes with a drizzle of gravy (or my Rich Pumpkin Wine Reduction Sauce).
