Casseroles are one of my favorite form factors for parties. Just keep in mind that many casseroles can double as delicious appetizer bites when you cut them into smaller cubes. Doing so is one of my favorite kitchen hacks for parties. I put out a tray of cute little appetizer bites without having spent more than an hour on finicky hand work.


While it’s worth noting that this will not work for all casseroles, I definitely consider those with higher structural integrity (i.e. served with a spatula not a spoon) to be perfect candidates.

Chicken Caesar Crustless Quiche
Ingredients
- 8 Eggs Jumbo
- 1 cup Caesar Dressing
- 1 cup Dinner Party Diaries Original Baking Mix
- ½ teaspoon Garlic Powder
- ¼ teaspoon Ground Black Pepper
- ¼ teaspoon Kosher Salt
- ¼ teaspoon Ground Mustard
- ¼ teaspoon Worcestershire Sauce
- 2 ounces Parmesan Grated. 57 grams // just under 1 cup
- 4 ounces Provolone Diced or Shredded. 113 grams // 2 cups
- 16 ounces Chicken Cooked and cubed – I suggest pre-cooked strips or cubes from the store.
- 12 ounces Broccoli Steamed – Steamer bag from the store or make your own.
Instructions
- Preheat the oven to 350°F and spray a 9×13-inch baking dish with nonstick cooking spray.
- In a stand mixer or mixing bowl, combine all ingredients other than the Provolone, Chicken, and Broccoli. Mix until well combined.8 Eggs, 1 cup Caesar Dressing, 1 cup Dinner Party Diaries Original Baking Mix, ½ teaspoon Garlic Powder, ¼ teaspoon Ground Black Pepper, ¼ teaspoon Kosher Salt, ¼ teaspoon Ground Mustard, ¼ teaspoon Worcestershire Sauce, 2 ounces Parmesan
- Add in the Provolone, Chicken, and Broccoli. Beat on low until both are completely incorporated.4 ounces Provolone, 16 ounces Chicken, 12 ounces Broccoli
- Pour the mixture into the prepared baking dish.
- Bake at 350°F for 45 – 50 minutes or until a toothpick inserted in the center comes out clean.
- For snack or appetizer bites, cut into an 8 by 6 grid (~1.5-inch cubes) and serve on a tray. For an entrée, serve as a casserole.

Notes
- This can be made in advance and stored covered in the refrigerator.
- If making it in advance, allow it to cool completely before covering to put in the refrigerator. This will prevent condensation from forming on the interior of the lid.
- When serving as appetizer bites, this recipe can either be served at room temperature or hot.
- Room temperature is easier but both are fine. (I actually prefer room temperature, because I find it easier to appreciate the distinct flavors.)
