You’ve got to try this Baked Brie with Keto Pickled Blueberries. By all means, you can use a dinner party as an excuse to make it or you can just whip it up to eat yourself. I certainly won’t judge if you do. It’s got melty brie topped with tangy pickled blueberries that have been roasted to bursting. Use some keto chips to scoop it up or just put some on your plate to eat with a spoon. I can confirm that both methods work.
This recipe was inspired by Red, White, and Pickled Blueberry Burrata from How Sweet Eats. I saw the blueberries in this recipe and knew I needed to ketofy them. To what purpose? I hadn’t decided. Then I just kept seeing them burst and bleeding into melted brie and had to make it happen.
What You Need to Make Baked Brie and Keto Pickled Blueberries
Equipment

- Oven Safe Dish – For baking the brie. I used a 1.75-quart round glass dish.
- Nonstick Cooking Spray
Ingredients
- Blueberries
- Apple Cider Vinegar
- Warm Water
- Allulose – I’m deliberately using allulose in this recipe to prevent the recrystallization that can happen with erythritol based sweeteners. From a flavor point of view, I suspect it will be fine either way, but have not yet tried it myself.
- Kosher Salt
- Brie Wheel – I buy the 19.6 ounce wheel of brie from Sam’s Club.
Getting Started with Making Baked Brie and Keto Pickled Blueberries
Pickling the Blueberries
We’re going to start by heating ¾ cup Apple Cider Vinegar, ½ cup of Water, 1.5 tablespoons of Allulose, and 1 teaspoon of Kosher Salt in a small saucepan until it comes to a rolling boil.
Then we’ll place 1 pint of Blueberries in a jar or glass bowl–preferably with a lid. Next we just pour the hot liquid over the blueberries and allow them to cool enough to cover and place in the fridge.
Preparing the Brie
Now we can prepare the wheel of brie by slicing off just the top layer of the rind. We want the blueberries and their juices to mingle directly with the cheese rather than sitting on top of the rind until someone cuts into it.
When you’re ready to bake, you’ll preheat the oven to 400°F. Then we’ll place the wheel of brie in a round baking dish with the removed rind side facing up.
Lori Note: I like to use a round baking dish that is close to the size of the wheel of brie so that it’s easier to keep the melted cheese and burst blueberry juice from running all over. That said, if you don’t have a dish that fits that description, don’t worry about it. It’ll be delicious either way.
Then you’ll spoon the blueberries on top of the brie. I use a slotted spoon since I’m not trying to pour all of the pickling liquid on the brie. (A fork would work too.)
Cooking the Baked Brie and Keto Pickled Blueberries
You’ll want to bake this at 400° for 15 – 20 minutes. I then use the broiler for another 2 – 3 minutes or until the blueberries have burst. You want the “burst” to get the blueberry juice running into the melted brie.
Serving Suggestions
I like to serve this Baked Brie and Keto Pickled Blueberries appetizer warm. However, it is inevitable that it will cool as it sits and people mix, munch, and mingle. That’s fine. I suggest using a spoon and cheese knife for serving to accommodate both the melty / soupy version and the slightly firmed up version. This is great with some Easy Keto Pita Chips or on its own.

Ingredients

Instructions
- Place 1 pint Blueberries in a jar or bowl with a lid.1 pint Blueberries

- Pour the liquid over the blueberries in the jar. Allow the mixture to cool and then store in the fridge until ready to use.
- Preheat the oven to 400°F and grease a round baking dish that will fit the wheel of brie with nonstick cooking spray.
- Slice only the top rind off of a 19.6 ounces Brie Wheel, leaving the bottom and sides intact.19.6 ounces Brie Wheel
- Place the wheel of brie into the prepared baking dish with the removed-rind side facing up. Spoon the pickled blueberries on top of the brie.
- Bake at 400°F for 15 – 20 minutes or until the blueberries burst. Finish under the broiler for 2 – 3 minutes if the blueberries haven’t burst by the end of the 20 minutes.
- Serve warm.
