I’ve had blue cheese recipes on the brain for about a year now but really haven’t had time to indulge myself in them. This Crustless Blue Cheese and Broccoli Quiche has been particularly loud in wanting its turn. A flavorful combination of broccoli, blue cheese dressing, and cheddar this quiche makes a creamy and delicious appetizer, breakfast, brunch, lunch, or side dish.
As of late, I’ve been incredibly obsessed with stratas and bread puddings. Decadent and wonderful though they are, their one drawback is the need for the multi-hour or overnight rest to give the bread time to soak up all of that creamy, eggy, flavorful deliciousness. While I can certainly do that, some weeks just don’t have that kind of time.
Due to the need for a crust, traditional quiches also have some pre-work steps. In pre-keto times, I would have just used store-bought crusts and called it a day. However, in the land of special diets, a simple crust often means more bowls, mess, baking, and clean-up. I’ll go back to my note on time. Some weeks just don’t allow for you to reinvent the universe.
So . . . my solution is to just skip the crust. This Crustless Blue Cheese and Broccoli Quiche is awesome without it. Save the time; skip the crust. I feel like that could be a mantra. Anyways, check it out and enjoy!

What You Need to Make Crustless Blue Cheese and Broccoli Quiche
Equipment
- Stand Mixer – Or Hand Mixer and Large Mixing Bowl
- Measuring Cups
- Measuring Spoons
- Kitchen Scale – Preferable, but not required.
- Rubber Scraper
- 2 Pie Plates – 9-inch – If you’re making full size quiches.
- 2 – 4 Mini Muffin Pans – Preferably Silicone. If you’re making mini quiches. If you only have 2, you’ll need to do this in two batches (or cut the recipe in half). Since the idea here is to make these for a party, I have the full amount set as the default below in the recipe.
- Nonstick Cooking Spray
Ingredients
- Eggs – I use jumbo eggs.
- Heavy Cream
- Blue Cheese Dressing – I used store-bought blue cheese dressing.
- Spices / Herbs
- Kosher Salt
- Ground Black Pepper
- Rosemary
- Sage
- Oregano
- Parsley
- Frozen Chopped Broccoli – I used frozen broccoli for this recipe. However, you can use fresh and cook it if you prefer. In that case, you’ll want to chop it and steam it. For me this is 4 minutes in the microwave using a microwave steamer basket.
- Shredded Cheddar – You can either shred your own or buy it pre-shredded. Just be aware that pre-shredded cheese often contains an anti-caking agent that adds about 1 gram of carbs per ¼ cup. I use pre-shredded cheese.
Getting Started with Making Crustless Blue Cheese and Broccoli Quiche
I sometimes forget how easy quiches can be to make. This Crustless Blue Cheese and Broccoli Quiche is a good reminder of just how quick and simple they can be.
Before I jump into the instructions, I’d like to make a quick note on quantity. The quantity of this recipe is intended to be party sized–either in terms of mini quiches or 2 9-inch ones. If you’d like to work in smaller quantities, just use the slider in the recipe card below to adjust the quantities down. That said, I’d really suggest just going for the larger quantity and having any leftovers for breakfast.
Mixing the Quiche
First we’ll start by cracking 12 eggs into a stand mixer or large mixing bowl. I like to give them a quick beating first before I start adding in other ingredients, but it really doesn’t matter. To that, you’ll add 1 cup of Heavy Cream and 1 cup of Blue Cheese Dressing. For seasonings, we’ll measure in ¼ teaspoon of Kosher Salt, ¼ teaspoon of Ground Black Pepper, ¼ teaspoon of Dried Oregano, ¼ teaspoon of Dried Parsley, ¼ teaspoon of Ground Rosemary, and ¼ teaspoon of Dried Sage. You’ll want to beat all of these ingredients well until they are completely combined.
Then we’re going to fold in 12 ounces of thawed (previously frozen) Broccoli and Shredded Cheddar Cheese. If the pieces of broccoli are large, chop them up first. This is less important if you’re making full size quiches and more relevant if you’re making mini quiches.
Preparing to Bake
Whether you’re planning to bake the larger quiches or the mini quiches, you’ll need to preheat the oven to 325°F and liberally grease your baking vessels with nonstick cooking spray.
Pour the mixture into the baking vessels. For the larger quiches, I use 2 9-inch pie plates (not deep dish). For the mini quiches, I need 4 mini muffin pans or to work in 2 batches. Of course you can also have the best of both worlds and make 1 9-inch quiche and 48 mini quiches. Winning.
Baking Larger Crustless Quiches
You’ll bake the larger quiches at 325°F for 30 minutes or until a toothpick inserted in the center comes out clean.
Baking Mini Crustless Quiches
For the mini quiches, you’ll still bake them at 325°F. However, you should only need 20 minutes or until a toothpick inserted in one of them comes out clean. You may need to add a couple of minutes depending on your specific oven. However, if you plan to reheat these for service, I would stop after 20 minutes. This just gives you a little more wiggle room on how long you keep them warming.
Serving Crustless Blue Cheese and Broccoli Quiche
Honestly, this dish can be served cold, warm, or room temperature. I find that if I’m serving them warm, I like to add a little Blue Cheese Drizzle for some added punch. In their cooled forms, you get more of the blue cheese flavor without any additions.

Crustless Blue Cheese and Broccoli Quiche
Ingredients

- 1 cup Blue Cheese Dressing
- ¼ teaspoon Ground Black Pepper
- ¼ teaspoon Kosher Salt

Add in 1 cup Heavy Cream, 1 cup Blue Cheese Dressing, ¼ teaspoon Ground Black Pepper, ¼ teaspoon Kosher Salt, ¼ teaspoon Oregano, ¼ teaspoon Parsley, ¼ teaspoon Rosemary, and ¼ teaspoon Sage. Continue beating until thoroughly combined.12 Eggs, 1 cup Heavy Cream, 1 cup Blue Cheese Dressing, ¼ teaspoon Kosher Salt, ¼ teaspoon Ground Black Pepper, ¼ teaspoon Rosemary, ¼ teaspoon Sage, ¼ teaspoon Oregano, ¼ teaspoon Parsley
- Fold in 8 ounces Cheddar (shredded) and 12 ounces Frozen Chopped Broccoli (thawed and chopped).12 ounces Frozen Chopped Broccoli, 8 ounces Cheddar
- Preheat oven to 325°F.
Baking Full Size Quiche:
- Liberally grease 2 9-inch pie plates (normal, not deep dish) with nonstick cooking spray. Divide the mixture evenly between the 2 pie plates.
- Bake at 325°F for 30 minutes or until a toothpick inserted in the center comes out clean.
- Serve warm, cold, or at room temperature. It’s great all the ways. .
Baking Mini Quiches:
- Liberally grease 2 to 4 mini muffin tins (if using 2, you’ll need to do 2 batches) with nonstick cooking spray. Pour (or spoon) the mixture into the wells.
- Bake at 325°F for 20 minutes or until a toothpick inserted in the center of a mini quiche comes out clean.
- Serve warm, cold, or at room temperature.
