You know I’m always a fan of an easy finger food or appetizer. A fun balance of flavors, these Jammy Ham and Cheese Low Carb Roll-ups are one of my favorites. The sweetness and creaminess of the Monte Cristo Sauce is complimented by a little zip from the Dijon mustard.
In addition to their yummy taste, I also love their versatility and portability. They are easy to make in advance and / or transport to a potluck. Easily dressed up or down depending on how you serve them, they make a perfect appetizer for a dinner party or a casual snack for a game day spread. Need an after work or after school snack? They’re great for that too.
What You Need to Make Jammy Ham and Cheese Low Carb Roll-ups
Equipment
- Small Mixing Bowl
- Measuring Cup – This is for the preserves. You can measure it or you can eyeball it. If you’re getting a 12.75 ounce jar, it’s half a jar. If your jar is some other size, it’ll be easiest to just measure it out.
- Small Whisk
- Rubber Scraper
- Cutting Board
- Chef’s Knife
- Maki Roll Cutting Guide – This is completely optional. I just happened to have one from my sushi making set and have found that it makes it way easier for me to cut even pieces. One “log” makes 8 pieces
Ingredients
- Cream Cheese
- Sugar Free Blackberry Preserves – I suggest getting the seedless kind. Feel free to swap in another berry flavor if you prefer or if blackberry isn’t available.
- Burrito Sized Low Carb Wraps
- Ham – Make sure to get it thickly sliced. If that’s not possible, just layer 2 thin slices in place of 1 thick one. Going with the thick sliced version, this is about 9 – 10 pieces, depending on size and shape.
- Provolone Cheese – This is about 18 slices, depending on size and shape.
- Dijon Mustard
Getting Started with Making Jammy Ham and Cheese Low Carb Roll-ups
As promised, these are pretty simple to put together. We’ve really just got the sauce making and then the assembly.
Making the Monte Cristo Sauce
In a microwavable mixing bowl, add the block of cream cheese and 6.5 ounces of sugar free jam. Microwave on the defrost setting for 45 seconds. Stir. Then repeat, using 10 second intervals until the cream cheese and jam are soft. Stir to completely combine. It should have the consistency of easily spreadable icing.
Assembling the Roll-ups
On a large flat surface lay out as many of the 6 low carb tortilla wraps as possible. Then place 2.5 slices of provolone cheese on the bottom half (the half closest to you) of each wrap. I break up the half piece of cheese to fill in the gaps left after placing the two whole slices.
Lay 1.5 slices of thick-cut ham on top of the cheese. Again, I try to cover the bottom half of the wrap. It won’t be perfect, but that’s okay.
Spread about 1.5 teaspoons of Dijon mustard in a stripe across each ham layer. Then spoon about 1.5 – 2 tablespoons of the Monte Cristo Sauce atop the mustard and spread it out. Reserve the remaining Monte Cristo Sauce for dipping the roll-ups.
Beginning at the edge with the cheese and meat, tightly roll up the wrap. I tried using a sushi mat and found that it help me with the evenness of my roll.
Chill, Slice, Store, and Serve
You could slice these right away. If you’re in a hurry and making these at the last minute (as I have done on several occasions), that’s fine. However, if you chill the rolls in the freezer for 20 to 30 minutes first, they’ll be easier to slice while keeping their round shape and not oozing sauce.
To slice, cut each log into 8 equal pieces. The end pieces may have issues staying together. You can either “glue” them with more sauce or consider them quality control pieces and have yourself a little snack. I usually do a bit of both. 🙂
The other even cutting trick I’ll share also involves my sushi making kit. I used the maki roll slicer guide to make my cuts even. This is certainly not a required piece of equipment, but if you happen to have one, this is a perfect alternate use.
To serve, arrange these little Jammy Ham and Cheese Roll-ups on a pretty tray. They can be served cold or at room temperature.
Or . . . if you want to change things up, stand them on-end in a pan or casserole dish and pop them in the oven at 350°F for 20 minutes and serve them hot.
Maybe drizzle them with some Honey Mustard Sauce.
