While I often lean heavily on wine for pairing drinks with my dinner parties, sometimes I just want a cocktail. The amount of sugar in normal cocktails is, of course, the challenge in keto land. For this particular dinner party, I wanted to serve things that were primarily red, white, or blue. These Keto Blueberry Mojitos were the answer to my sugar free cocktail wishes. They are bright, well-balanced, and pretty to look at. You should give them a try!

What You Need to Make Keto Blueberry Mojitos
Equipment

Ingredients
- For the Blueberry Syrup
- Fresh Blueberries – The original recipe calls for frozen. I usually always buy fresh berries.
- Water
- Powdered Allulose – The original recipe calls for Swerve Granular. I like powdered versions for a bit more smoothness and I deliberately chose to use allulose because it doesn’t re-crystalize.
- Lemon Juice
- Xanthan Gum
- For the Mojitos
- 1 recipe Keto Blueberry Syrup from All Day I Dream About Food
- Fresh Mint Leaves – At my grocery store, the price of a mint plant is exactly the same as a package of fresh mint. So I just bought the plant and used the whole thing.
- Granulated Monkfruit Sweetener – You could also use granulated erythritol.
- Clear Rum – I used Bacardi for this.
- Lime Juice – I used the lime juice from a squeeze bottle.
- Club Soda
- Ice
Getting Started with Making Keto Blueberry Mojitos
Since this is for a dinner party, we’re making a pitcher of these Keto Blueberry Mojitos. But don’t worry, you can store the mixture in the fridge for a couple of days if you have extra. I seriously doubt that you will. 🙂
Making the Blueberry Syrup
Okay, to get started, there is a precursor step of making the Keto Blueberry Syrup from All Day I Dream About Food with one change: using allulose instead of erythritol.
For the Blueberry Syrup, I followed the recipe as written OTHER THAN that change, because I didn’t want the syrup to crystalize.
Start by adding the blueberries, water, and allulose to a medium saucepan. Bring it to a boil and then simmer per the instructions.
Remove the syrup from the heat. Then add the lemon juice and xanthan gum. Cool the syrup completely and store it covered in the fridge until you are ready to use it.
Lori Side Note: I made a double batch of this recipe, using half for these Keto Blueberry Mojitos and the other half for Keto Berry Trifle.
Making the Keto Blueberry Mojitos
In a large pitcher, muddle ~40 mint leaves with ¼ cup Granulated Monkfruit Sweetener.
Add 2 cups of clear rum and 1 recipe (about 1 cup) of the blueberry syrup to the pitcher. Use a stick blender to thoroughly combine.
Lori Note: The foam will stabilize a little due to the xanthan gum. That’s fine.
Next add ½ cup lime juice and stir to incorporate it into the mix.
At this point, your mix is ready to go. Add the club soda and ice to individual glasses upon serving. This prevents the mix from getting diluted and the club soda from losing its fizz early.
