Sometimes you need a simple appetizer that looks fancy. If that sounds like you, these Manchego Prosciutto Blueberry Bites are for you. The blend of creaminess from the Manchego, saltiness from the prosciutto, sweetness from the syrup, and sweet acidity from the blueberry make a nice contrast of flavors and textures in a single bite-size appetizer. A pop of color from the blueberries provides a nice visual too. These little bites are an easy win hors d’oeuvre for your next dinner party.
I know I’ve mentioned this before, but Scar (my other half and partner in crime) and I love to go on cruises. One of my favorite times of day on the ship is Cocktail Hour, not for the cocktails but for the elegant little finger foods. They’re tiny right, so of course that makes it okay to try one of everything. And they’re fancy. However, when you really take a look at the components, “fancy” hors d’oeuvres are usually pretty simple ingredients just presented very prettily. That is how I classify these Manchego Prosciutto Blueberry Bites.

What You Need to Make Manchego Prosciutto Blueberry Bites
Equipment
- Cutting Board
- Chef’s Knife
- 48 Toothpicks
- Serving Plate
- Plastic Wrap – For covering until ready to serve
Ingredients
- Manchego Cheese – You’ll need to cut this into 48 cubes. My cube size is somewhere between ¾” and 1” each. I typically buy a large block of it at Sam’s Club and then use any leftovers for sandwiches or snacking throughout the week.
- Blueberries – I like the large ones for this recipe but can’t always find them. So use what you can get.
- Prosciutto – I usually buy this in a 14 ounce pack at Sam’s Club and either serve the remaining pieces as their own appetizer or save them for use later in the week.
- Sukrin Gold Syrup (or other keto friendly honey substitute) – I’ve only been able to find this ingredient on Amazon, but if you have a good specialty food grocery store, you may find it there. I really like this syrup as either an ingredient or just to use in my tea. Or, okay, this is me, so let’s be honest. I eat it with a spoon too. 😁 Of course, if you are not trying to keep this low carb, you could just use regular honey.
Getting Started with Making Manchego Prosciutto Blueberry Bites
This is definitely one of the simple, easy recipes to make. The only two “gotchas” that you need to be aware of are:
- Sourcing the Sukrin Gold Syrup or other keto friendly honey substitute if you don’t already have and use it regularly
- Depending on availability in your location, this might not be an ingredient you can just run to the store for at the last minute. So order or otherwise find it in advance.
- Planning your “Day Of” Timeline for a handwork appetizer
- This doesn’t take long, but it isn’t something you would make a day in advance and have all out of the way either. So just make sure you budget for the time to prep these scrumptious little bites in addition to the rest of your menu.
Cutting Up the Cheese and Meat
First, we’ll remove the waxy rind from the Manchego. Personally, I don’t mind it much, but it’s not really what you want in these Manchego Prosciutto Blueberry Bites. Then, cut the cheese into cubes. I make mine somewhere between ¾” and 1” each. From a recipe and nutrition information point of view, they are calculated as 0.5 ounce pieces. Set them out on the serving dish.
For the prosciutto, I lay out a slice on the cutting board and roll it up long-ways like a little log. Then cut it into 6 equal pieces. I fold each of these in half and place it on top of a cheese cube.
Assembling the Manchego Prosciutto Blueberry Bites
While I like the idea of drizzling the Sukrin Gold Syrup over the blueberries too, I don’t like syrup on the toothpicks. That just leads to sticky fingers which is annoying. Since I can’t get the blueberries to stay in place on top without the toothpicks, I drizzle first. Liberally drizzle the honey substitute over all of the Manchego and prosciutto stacks.
Poke a toothpick through the center of each blueberry and spear it on top of each bite.
Cover the plate with plastic wrap and store in the fridge until you are ready to serve these bites.

Manchego Prosciutto Blueberry Bites
Ingredients
- 1.5 pounds Manchego Cheese Cut into 48 cubes, ~ ¾ – 1-inch each
- 8 slices Prosciutto Cut into 6 pieces each. For me this was ~ 7 ounces.
- ¼ cup Sukrin Gold Syrup Or other keto friendly honey substitute. Quantity is approximate. You will be drizzling.
- 48 Blueberries Large ones if you can find them
Instructions
- Remove the waxy rind from the cheese, then cut it into 48 cubes, approximately ¾ – 1 inch each. Set them out on the serving plate.1.5 pounds Manchego Cheese
- Lay out a slice of prosciutto and roll it up long-ways. Then cut it into 6 equal pieces. Place each piece on top of one of the cheese cubes. You may need to fold the pieces in half to make them fit. Repeat with the remaining slices.8 slices Prosciutto

- Stick a toothpick through the center of a blueberry and then poke it into the center of a prosciutto and Manchego stack. Repeat with the rest of the blueberries.48 Blueberries
