Melty Chili Garlic Brie

(a.k.a. Bloody Coffin Brie)

This Melty Chili Garlic Brie is another one of my “super simple but can be made to look fancy” appetizers.  The brie is wonderfully gooey and the chili garlic sauce adds the perfect slightly spicy kick and a splash of color.  It’s great for a casual spread or as part of a fussier cheese and charcuterie board.

By now it’s no secret how much I like, revere, and appreciate simple appetizers and desserts that can look fancy (if you want them too) but take minutes to toss together.  This Melty Chili Garlic Brie is just such a dish.  

If you want to make it festive, this is a great choice for a Halloween dinner party.  Just cut the brie into the shape of a coffin, call the chili garlic sauce blood, and you’re good to go.  You’ve just converted your Melty Chili Garlic Brie into a Bloody Coffin Brie.  😛  Give it a try for your next dinner party!

What You Need to Make Melty Chili Garlic Brie (a.k.a. Bloody Coffin Brie)

Equipment

  • Cutting Board
  • Chef’s Knife
  • Microwave Safe Dish

Ingredients

  • Brie – You can either use a wedge of at least 8 ounces or a larger wheel (like a 19.5 ounce round) cut down to size.  Either serve the extra pieces on the side or save them to munch on later.  
  • Chili Garlic Sauce
  • Pork Rinds or Keto Pita Chips – Optional for serving.

Making Melty Chili Garlic Brie (a.k.a. Bloody Coffin Brie)

This is about as easy as you get in terms of appetizers.  

Start with either an 8-ounce wedge of Brie or a larger round.  I usually get the 19.5 ounce wheels from Sam’s Club.  

Halloween Version – Bloody Coffin Brie – Cutting the Coffin

For the Halloween Bloody Coffin Brie version of this recipe, use a sharp knife to cut the wedge into the shape of a coffin.  I cut a sliver off of the bottom and a slightly larger sliver off the top to make the flat head and footer of my coffin.  

I would say to free hand the rest of it for simplicity.  The way that I did it was to then cut a flat edge on the left and right to make the “shoulder” part of the coffin.  Then I made angled cuts inward from the shoulders to the top.  My shape looked something like this octagon:

In retrospect, I probably should have simplified it to a hexagonal shape more like this:

Live and learn.

Regarding the rind, I like leaving it on, but you can slice off the top rind if you prefer.  Just be aware that you’re likely to lose your coffin shape a bit as the cheese melts if you do so.  

Either Version – Topping the Brie

From this point on, the instructions are the same regardless of if you want to make the Halloween theme version of this appetizer or not.  

Next, we’ll spoon 2 tablespoons of Chili Garlic Sauce on top of the brie wedge.  If you want to use the whole 19.5 ounce brie wheel, that’s fine too.  However, in that case, you’ll need more like 4.5 tablespoons of Chili Garlic Sauce.  

Warming and Serving

To finish things off, we’re going to make sure the chili garlic coated brie is on a microwave safe plate and then pop it into the microwave for 1 minute.  Check it and continue heating it in 30 second increments until it is sufficiently melty for your taste.  If you cut it into a coffin shape, you want to stop before it loses its shape.  

Lori Side Note: If you wanted to, you could heat this in the oven.  If I were doing so, I’d set the oven to 350°F and then put it in for 10 minutes, check it and likely leave it in for 5 more minutes to complete the melt.  I would just suggest keeping an eye on it, so it gets melty and not crispy. 

Serve it while the cheese is melty.  Perhaps plate it with some pork rinds or Easy Keto Pita Chips for munching.

Melty Chili Garlic Brie (a.k.a. Bloody Coffin Brie)

You’ve got to try the flavor explosion for your mouth that is this Melty Chili Garlic Brie! Ooey-gooey brie melted with spicy chili and garlicky goodness. It’s the perfect blend of heat and cheesy decadence. You and your guests won’t be able to resist taking another bite!

Ingredients

  • 8 ounce Brie Wedge or a larger wheel cut down to size
  • 2 tablespoons Chili Garlic Sauce
  • Pork Rinds or Keto Pita Chips for serving

Instructions

  • Cut an 8-ounce Brie Wedge into the shape of a coffin and set it on a microwave safe dish.
  • Spoon 2 tablespoons of Chili Garlic Sauce on top of the wedge of brie.
  • If you prefer to not have the rind on top, you can slice it off before spreading the chili garlic sauce on top.
  • Microwave the brie and chili garlic sauce for 1 minute. Check it and heat in 30 second increments until it reaches your desired level of meltiness but still generally holds its shape. (For me in my microwave, it took 2 minutes total.)
  • Serve it while melty with pork rinds or keto pita chips.
