When I think of popsicles, the health benefits are definitely not the first things that usually come to mind. Between the blueberries and chia seeds, these Creamy Keto Fruit Popsicles might just become my exception to that rule. Regardless of all that, they are creamy, refreshing, and delicious–a perfect treat on a hot day.
You may have noticed that I have a mild obsession with chia seeds. They are incredibly versatile, filled with nutrients and antioxidants. Because they are mostly flavor neutral, they make easy additions to both savory and sweet recipes. One of my favorite sweet applications of chia seeds is overnight pudding. I kind of think of these Creamy Keto Fruit Popsicles as a cool summertime version.
As with overnight chia pudding, the flavor combination options abound. This specific recipe uses blueberries, but you could easily pick another fruit and change things up by adding some flavor extracts. I’m thinking that an Almond-Cherry version is in my near future. Or . . . you could go tropical with something like pineapple or mango extract.

What You Need to Make Creamy Keto Fruit Popsicles
Equipment
- Medium Saucepan
- Measuring Cups
- Measuring Spoon
- Can Opener
- Whisk
- Silicone Jar Scraper
- Spoon
- 10-Cavity Silicone Popsicle Mold
Ingredients
- Chia Seeds – Either white or black chia seeds will work. The white ones will be less visually noticeable, but they are significantly more expensive. It really just depends on if your audience will care.
- Heavy Cream
- Full-Fat Unsweetened Coconut Milk
- Powdered Erythritol – This will probably work with other sweeteners. I just haven’t had a chance to try my usual variety yet but will update the recipe as I do.
- Kosher Salt
- Blueberries – You can feel free to swap in Raspberries, Blackberries, Strawberries, or another fruit of your choice. If whatever you choose is larger than a blueberry, cut it in a ¼ inch dice, so that you get nice little fruit bites in your popsicles.
Getting Started with Making Creamy Keto Fruit Popsicles
These Creamy Keto Fruit Popsicles are actually pretty easy to make. I will tell you to mentally prepare for the whisking while everything heats, but that’s only 20 minutes. Most of the time on this one is letting things sit.
Combining
To start, in a medium saucepan,we’ll combine ½ cup of Chia Seeds, ¾ cup of Heavy Cream, 13.5 ounces of Full-Fat Unsweetened Coconut Milk, ½ cup of Powdered Erythritol, and ¼ teaspoon of Kosher Salt. Whisk thoroughly to eliminate lumps of chia seeds.
Now you’ll let it sit for 5 minutes before whisking again to break up any clumps. Then you’ll allow it to sit for 10 more minutes and whisk again. We really don’t want clumps of chia seeds.
Cooking
Next, we’ll place the saucepan over low to medium heat and bring the mixture to a simmer. We’ll stir pretty much continuously for the next 18 – 20 minutes. It will and should be very thick.
Once that’s done, you’ll remove the pan from the heat and allow it to cool for 15 minutes. At that point, we’ll stir in ¾ cup of Blueberries so that they are evenly distributed. You could also pick another fruit of your choice to use in place of the blueberries. If that fruit is larger than blueberries, you’ll want to cut it into roughly ¼ – inch sized pieces.
Freezing
Finally, we’re ready to spoon the mixture into the silicone popsicle molds and place in the freezer for 1 hour.
At that point, we need to pull them out of the freezer and insert the popsicle sticks. Lastly, you’ll return the Creamy Keto Fruit Popsicles to the freezer for at least 6 hours or overnight.

Creamy Keto Fruit Popsicles
