Gluten-Free Dinosaur Blondies (Lower Carb)

These Gluten Free Dinosaur Blondies (Lower Carb) are a colorful, fun twist on a low carb treat.  Made with boxed keto cake mix and off the shelf keto frosting with some food coloring, these couldn’t be easier.

While searching for ideas for my Dinosaur Themed Dinner Party, I came across this non-keto dinosaur dessert recipe.  I was intrigued and set about turning it low carb and gluten free.  

Inspired by this: Dinosaur Dessert Bar Recipe from cutefetti

I used 2 boxes of Keto Yellow Cake Mix and 2 jars of Keto Vanilla Frosting.  I also substituted Lily’s Butterscotch Chips in place of the white chocolate chips.

Gluten-Free Dinosaur Blondies (Lower Carb)

A colorful, fun twist on a low carb treat using keto cake mix and frosting, these Gluten-Free Dinosaur Blondies (Lower Carb) are easy and delicious.

Ingredients

  • 21.2 ounces Keto Yellow Cake Mix 2 boxes // 600 grams
  • 2 Eggs Beaten. I use Jumbo eggs.
  • ⅓ cup Vegetable Oil
  • ½ cup Unsweetened Vanilla Almond Milk
  • ¾ cup Lily’s Stevia Sweetened Butterscotch Chips
  • Green Food Coloring or Food Coloring Powder To your desired colors
  • 22 ounces Keto-Friendly Vanilla Flavored Frosting
  • Keto Sprinkles or Cake Decorations As desired

Instructions

  • Mix 21.2 ounces Keto Yellow Cake Mix, 2 Eggs (beaten), ⅓ cup Vegetable Oil, and ½ cup Unsweetened Vanilla Almond Milk in a large bowl until thoroughly combined. Stir in ¾ cup Lily’s Stevia Sweetened Butterscotch Chips until distributed.
    21.2 ounces Keto Yellow Cake Mix, 2 Eggs, ⅓ cup Vegetable Oil, ½ cup Unsweetened Vanilla Almond Milk, ¾ cup Lily’s Stevia Sweetened Butterscotch Chips
  • Divide the batter evenly into 2 bowls. Use the Green Food Coloring or Food Coloring Powder to tint one bowl of dough a dark green and the other a lighter green.

  • Grease a 9×13-inch baking dish with nonstick cooking spray. Press the lighter dough into the bottom and press in the darker dough on top. Smoosh until the two form creative layers.
  • Bake at 325°F for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the blondies to cool while you prepare the frosting.
  • Combine 22 ounces Keto-Friendly Vanilla Flavored Frosting with Green Food Coloring or Food Coloring Powder until it reaches your desired color.

  • Frost the blondies and decorate with Keto Sprinkles or Cake Decorations.

  • Sugar Alcohols and Dietary Fiber get subtracted from the Total Carbs for Net Carbs and then divided by the number of servings
    • Total Carbs: 792 grams
    • Minus Dietary Fiber: 216 grams
    • Minus Sugar Alcohols: 322 grams
    • Net Carbs: 254 grams
    • Net Carbs per Serving: 14 grams
