At this point, it’s been several years since I’ve been a big fan of white chocolate. Tastes change and all that. However, this past Christmas my mom added Reindeer Munch (a.k.a. “Reindeer Feed” or “Moose Munch”) to our list of cookie and candy recipes. It was delicious, addictive, and not even remotely keto friendly.
Unfortunately, finding keto friendly alternative ingredients was not easy, so I set the idea aside. Then, as I was planning two of our Cats’ 1st Birthday Party and looking for a tasty snack that I could call something like Kitten Chow or Meow Mix, the idea resurfaced. I had something like Puppy Chow or Moose Munch in mind. But now to solve the ingredient problem.
Inspiration struck while I was munching on one of the snack mixes from my favorite keto cereal brand. It already had nuts, cereal, and keto pretzels–pretty much everything I needed. Problem solved, right? Wrong.
I tried turning the snack mix into Meow Munch Mix, but some of the seasonings clashed with the sugar free white chocolate. So I went back to the drawing board. The saltiness was fine; it was just the other spices that weren’t working. Where I landed was using the regular keto cereal and making my own mix of nuts and keto pretzels.
From there, I just needed a sugar free M&M equivalent and sugar free white chocolate. Good news, Russel Stover makes sugar free candy coated chocolates which are generally available at my local drug store and Lily’s offers white chocolate baking chips. (Yeah, I said drug store not grocery store because why would we sell diabetic-friendly, sugar free items in the same place as other groceries? ::sigh:: and ::grrr::)
Sourcing problems solved. Read on for the specifics of how much to use and what to do.
This recipe was inspired by Reindeer Munch from Allrecipes.
What You Need to Make Keto Meow Munch Mix
Equipment
- Small to Medium Microwave-safe Bowl – For melting the sugar free white chocolate baking chips
- Rubber Scraper
- Large Mixing Bowl
- Measuring Cups
- Rimmed Baking Sheet
- Aluminum Foil – For lining the Rimmed Baking Sheet
Ingredients
- Catalina Crunch Cereal – Honey Graham, Maple Waffle, or Cinnamon Toast Flavors – I order this directly from Catalina Crunch, but I also see it in the grocery store and Walmart.
- Sugar Free Candy Coated Chocolates – I use the Russel Stover’s ones. I usually find these at the drugstore rather than the grocery store. It’s probably just my local selections, but I generally find that the drugstores have a better selection of sugar free candy than the grocery stores.
- Sugar Free White Chocolate Baking Chips – I typically use Lily’s. Sometimes I can find white chocolate chips in the store and other times I have to get them online. For in store shopping, I typically have the best luck at Walmart.
- Lightly Salted Roasted Cashews
- Lightly Salted Roasted Pecans
- Keto Pretzels – I find these on Amazon.
Making Keto Meow Munch Mix
Keto Meow Munch Mix is largely a “combine things” recipe, but since we’re talking about melting you might want to take a look at the specifics.
Before you begin, line a rimmed baking sheet with aluminum foil and set it aside.
Start by pouring 2 cups of Catalina Crunch Cereal (flavor of your choice, but I recommend Honey Graham, Cinnamon Toast, or Maple Waffle), 2 cups Keto Pretzels, and ½ cup Lightly Salted Roasted Cashews, and ½ cup Lightly Salted Roasted Pecans into a large mixing bowl. Add in 1 cup of sugar free candy coated chocolate pieces (basically sugar free M&Ms that are not the M&M brand). Mix to distribute evenly.
In a small to medium sized microwave safe bowl, heat 12 ounces of sugar free white chocolate baking chips in the microwave. Start with 30 seconds and then stir well. Continue to microwave in 10 second increments, but stir REALLY WELL after each melting. This typically takes me about 2 – 4 rounds, but your mileage may vary. You do not want to overheat the white chocolate or it will burn / seize up and you’ll need to start over.
Lori Side Note:
You could also melt the sugar free white chocolate using a double boiler or an induction burner. The induction burner is nice because it gives you very fine grained control over your temperature as well as the ability to leave it on a single temperature to keep the chocolate melted without burning.
Then it’s time to drizzle the white chocolate over the mixture in the large mixing bowl. Keep stirring to get everything coated.
Dump the coated mixture out onto the foil-lined baking sheet and spread it out.
Allow it to cool and harden for about 30 minutes. You can do this in the fridge if you have the space for it. However, the chocolate will still harden at room temp, so it’s not required unless your house is hot.
Once cooled and hardened, break it apart into pieces and store in an airtight container in the fridge until you are ready to serve it.
If you’re feeling thematic, serve it in a new and clean cat bowl. 😀
