Lower Carb Cherry Brownie Bites

Easy to make, decadent, a little gooey, and a lot delicious, these Lower Carb Cherry Brownie Bites are a perfect dessert for your next dinner party or any time you need a sweet treat and are short on time.

As I’ve mentioned before, when I’m getting ready for a dinner party, I have a tendency to procrastinate on dessert recipes.  This is mostly because I most often make quite a mess.  To compensate for this, I like to find simple desserts so that saving them until close to the end works in my favor.  (If it’s part of the plan, it’s no longer procrastination.  I swear.  😛)  These Lower Carb Cherry Brownie Bites fit this model to a T.  

A quick note on the low-carbiness of this dessert:

Because these have cherries in them, they wouldn’t qualify as keto.  However, because we’re using the keto-friendly brownie mix, they are still lower carb dessert treats.  As with most things, I would also note that quantity matters (from a dietary point of view).  Moderation is your friend.  🙂

What You Need to Make Lower Carb Cherry Brownie Bites

Equipment

  • Large Mixing Bowl
  • Fork or Whisk
  • Measuring Cup
  • Small Microwave Safe Bowl – for melting the butter
  • Mini Muffin Pan – Preferably Silicone
  • Nonstick Cooking Spray

Ingredients

  • Keto-Friendly Chewy Fudge Brownie Mix – I use the Duncan Hines version.  1 package is 10 ounces or 283.5 grams.
  • Eggs – I use Jumbo unless they’re out of them at the store.
  • Water
  • Unsalted Butter
  • Woodford Reserve Bourbon Cherries – See Recipe Notes for alternative suggestions.  Also, these all by themselves are not 

Getting Started with Making Lower Carb Cherry Brownie Bites

Because we’re using a boxed brownie mix, this recipe is super simple and quick to put together.  

Since they are so quick to put together, we’ll go ahead and preheat the oven to 350°F and spray a mini muffin tin (preferably silicone) with nonstick cooking spray before we get going.  

Making the Keto Brownie Batter

In a large mixing bowl, we’ll start by combining the 10 ounce Keto-Friendly Chewy Fudge Brownie Mix packet, 2 Eggs, ⅓ cup of Water, and 6 tablespoons of melted Unsalted Butter.  You’ll just stir them with a fork or whisk until everything is fully incorporated.  

Prepping the Bourbon Cherries

Before we start the assembly, I find it easiest to drain and remove the stems from the 24 Woodford Reserve Bourbon Cherries that I’ll need.  I just place them in a bowl for easy access during the next step.  

Assembling the Cherry Brownie Bites

Next, we’ll spoon approximately 1 tablespoon of the brownie batter into each mini muffin well.  You want the mini muffin well to be about two thirds full.  Then we’ll press 1 cherry into each mini muffin well.  After that, you need to cover each cherry with more brownie batter.  I use my fingers to help cover the cherries.  

Baking the Lower Carb Cherry Brownie Bites

Now all we need to do is bake them at 350°F for 15 minutes or until brownies are done (up to 5 minutes more).  Then I let them cool in the pan for 10 minutes before removing them to a cooling rack to finish cooling.  

That’s it!

Ingredients

  • 2 Eggs I use Jumbo.

Instructions

  • Preheat the oven to 350°F and spray 1 mini muffin tin (preferably silicone) with nonstick cooking spray.
  • In a large mixing bowl combine 10 ounces Keto-Friendly Chewy Fudge Brownie Mix, 2 Eggs, ⅓ cup Water, and 6 tablespoons Unsalted Butter (Melted). Stir until completely combined.

Notes

  • Alternatives to the Woodford Reserve Bourbon Cherries
    • While these have a great flavor, they may be a challenge to find. Instead you can also use other maraschino cherries or brandied cherries of your choice. I would recommend something more like Luxardo cherries versus the bright red ones.
  • Notes on Carb Calculation
    • The tool that I use to calculate nutrition information doesn’t have a way to account for sugar alcohols and subtract them from Net Carbs.  So, here is the calculation for 1 cherry brownie bite:
      • 11 g Total Carbs (per brownie bite)
      • – 2.5 g of Sugar Alcohols
      • – 2 g of Dietary Fiber
      • = 6.5 g Net Carbs
    • While this is not the lowest carb treat, it is much lower than if traditional brownie mix were used.
