Easy Fajita Veggies

Taco bars are a great way to provide your guests with a flexible yet cohesive menu.  These Easy Fajita Veggies are so simple to put together that they’re sure to become a staple of your taco nights.

What You Need to Make Easy Fajita Veggies

Equipment

  • Cutting Board – For slicing the veggies
  • Chef’s Knife – For slicing the veggies
  • 1 or 2 Gallon Zip Top Bag
  • 2 Rimmed Baking Sheets
  • Heavy Duty Aluminum Foil

Ingredients

  • Large Red Onions – Sliced
  • Bell Peppers – Sliced.  You can use any color you like.  I usually grab a bag of the red, orange, and yellow ones.  
  • Avocado Oil or Olive Oil 
  • Fajita Seasoning Mix – You can either use store-bought or make your own.  If you’d like to make your own, see the Recipe Notes. 

Getting Started with Making Easy Fajita Veggies

This one is pretty simple.  Buy or make seasoning.  Slice veggies.  Roast veggies.  

If you are making your own Fajita Seasoning Mix, start there. 

To Make Fajita Seasoning Mix

Combine the following spices: 

0.5 tablespoons Chipotle Powder, 3 tablespoons Cumin, 1.5 tablespoons Garlic Powder, 1 tablespoon Onion Powder, 1.5 tablespoons Paprika, 0.5 tablespoon Ground Black Pepper, 1 tablespoon Kosher Salt

  • If you want to spice things up, you can increase the amount of Chipotle Powder to your taste.  

This will make more seasoning than you need for this recipe.  However, I personally, like to make a larger quantity because I am either planning to use it right away with whatever else I’m cooking or to have it handy for the next time I need it.  

Fajita Seasoning Ingredients

Back to the Fajita Veggies

Next, get a zip top bag ready for the sliced veggies.  If you are making this recipe in the quantity listed, which is to feed a group, I recommend using a 2 gallon zip top bag.  If you can’t find that size, either use 2 1-gallon zip top bags or work in batches.  Then go ahead and slice the red onions and bell peppers into strips.  Toss them in a zip top bag.  

Sprinkle in about half of the seasoning, seal the bag, and shake to coat.  Repeat this procedure with the remaining seasoning.  

Drizzle in the oil, seal, and shake to coat again.  

Preheat the oven to 400 degrees F.

Prepare 2 large rimmed baking sheets.  In the interest of easier clean up, I recommend lining them with heavy duty aluminum foil.  

Spread the peppers and onions across the rimmed baking sheets. 

Roast the veggies at 400 degrees F for 20 minutes.  Pull them out of the oven, toss them with tongs or a spatula, and put them back in for about another 20 minutes.  

Remove from the oven and serve warm.  These Easy Fajita Veggies make a great component for a taco / fajita / burrito bar or as a side dish on a Mexican themed night.

Ingredients

  • 3 Large Red Onions Sliced
  • 6 Bell Peppers Sliced. Any color.
  • 2 – 3 tablespoons Avocado Oil or Olive Oil
  • 4 tablespoons Fajita Seasoning Mix See Recipe Notes below or use store-bought

Instructions

  • Slice 3 Large Red Onions and 6 Bell Peppers. Place them in either a 1 or 2 gallon zip top bag. If you have 2 gallon bags, you can fit the onions and peppers in one bag. If not, you’ll need 2 bags or to work in batches.
    3 Large Red Onions, 6 Bell Peppers
  • Sprinkle in the 4 tablespoons Fajita Seasoning Mix, seal, and shake to coat.

  • Drizzle in 2 – 3 tablespoons Avocado Oil or Olive Oil, seal, and shake to coat.

  • Spread out the Fajita Veggies on a foil-lined rimmed baking sheet.
  • Roast in the oven at 400 degrees F for 20 minutes. Remove, toss, and return to the oven for another 20 minutes.
  • Serve warm, either as a side dish or topping option.

Notes

  • Fajita Seasoning Mix
    • You can make your own using the following ingredients. This recipe makes 9 tablespoons which is more than you need for this specific recipe. However, I usually just make up a larger batch and use it in other recipes.
      • 0.5 tablespoons Chipotle Powder
      • 3 tablespoons Cumin
      • 1.5 tablespoons Garlic Powder
      • 1 tablespoon Onion Powder
      • 1.5 tablespoons Paprika
      • 0.5 tablespoon Ground Black Pepper
      • 1 tablespoon Kosher Salt
