I am a huge fan of pumpkin in many of its forms. That said, there is something I find particularly wonderful about roasting it. This recipe for Roasted Spiced Pumpkin Salad takes that inherent sweetness and gives it a bit of a kick from the Chaat Party Spice Blend*. However, fear not. Although there is some kicky flavor here, it is well balanced by the tangy goat cheese dressing, the meatiness of the pecans and the sweetness of the Sugar Free Honey Dijon Dressing.
What You Need to Make Roasted Spiced Pumpkin Salad

Ingredients
- Spring Mix Lettuce
- Pie (Sugar) Pumpkin – Make sure to get a pie / baking pumpkin and NOT a carving pumpkin.
- Goat Cheese
- Pecans – I have directions for toasting them below. However, if you buy them already toasted, you could skip that step.
- Pepitas – As with the pecans, I include directions below for toasting these. But . . . you can skip that step if you find them already toasted.
- Satya Chaat Party Spice Blend – This is one of the many great blends from Satya. It adds a great kick to the roasted pumpkin.
- Kosher Salt
- Avocado Oil
- Skinnygirl Sugar Free Honey Dijon Dressing – I suggest serving this on the side.
Getting Started with Making Roasted Spiced Pumpkin Salad
We’ll break this down into a few steps. The first thing we’ll do is roast the Pie Pumpkin. To get started, we’ll preheat the oven to 350° and line a rimmed baking sheet with heavy duty aluminum foil. Then, I suggest liberally greasing it with nonstick cooking spray.
Roasting the Pumpkin
You can cut the pumpkin in half and remove the seeds and stringy “guts” from the center. For the first half of the roasting, we’ll place the two halves face side down on the baking sheet and roast it for 30 minutes. Then you’ll remove it from the oven, turn up the temperature to 400°F, and allow the pumpkin to cool for ten minutes.
While you’re waiting, you can crumble 8 ounces of Goat Cheese and then stash it, covered, in the refrigerator until you’re ready to assemble the salad.
Once the pumpkin is cool enough to handle, you’ll remove the skin from the pumpkin and cut the flesh into 1-inch cubes. To give them a nice kick, we’ll toss them with 2 tablespoons of Satya’s Chaat Party Spice Blend* and ½ tablespoon of Kosher Salt. You can do this in a bowl or zip top bag. Then we’ll drizzle in approximately 2 tablespoons of Avocado Oil and spread the pumpkin cubes out on the lined baking sheet.

Now, we’ll roast them at 400°F for another 25- 30 minutes or until the edges start to turn crispy and just begin to caramelize. Remove it from the oven and allow it to cool slightly while you mix the other ingredients.
Toasting the Pecans and Pepitas
While the second pumpkin roast is happening, you can pour 1 cup of Pecans and ½ cup of Pepitas into a dry sauté pan. You’ll toast them over medium high heat until they just begin to turn fragrant. Then, we’ll remove them from heat and set them aside.
Mixing Up the Roasted Spiced Pumpkin Salad
To assemble the Roasted Spiced Pumpkin Salad, in a large serving bowl you’ll combine 16 ounces of Spring Mix with the toasted Pecans and Pepitas. Then we’ll toss in the roasted spiced Pumpkin cubes and finally the crumbled Goat Cheese.
Serving and Storing
You can serve it immediately or store it in the refrigerator until you’re ready to serve. For dressing, I like Skinnygirl’s Sugar Free Honey Dijon Dressing. I usually leave it on the side so that my guests can choose their own amount.

Roasted Spiced Pumpkin Salad
Ingredients
- 1 Pumpkin Seeds removed, cubed, and roasted. Approximately 3-pound whole pie pumpkin before removing seeds, stem, and skin.
- 2 tablespoons Satya Chaat Party Spice Blend
- ½ tablespoons Kosher Salt
- 2 tablespoons Avocado Oil
- 1 cup Pecans Toasted
- ½ cup Pepitas Toasted
- 8 ounces Goat Cheese
- 16 ounces Spring Mix Lettuce
- 8 ounces Skinnygirl Sugar Free Honey Dijon Dressing Serve on the side.
Instructions
- Preheat the oven to 350°F. Line a rimmed baking sheet with aluminum foil and spray it with nonstick cooking spray. Cut 1 Pumpkin in half and remove the seeds and stringy guts. Place the pumpkin halves face down on the prepared baking sheet. Roast for 30 minutes. Remove from the oven and let cool for 10 minutes. Turn up the oven temperature to 400°F.1 Pumpkin
- Remove the skins and cut the flesh of the pumpkin into 1 inch cubes.
- Place the pumpkin cubes in a zip top bag and sprinkle in 2 tablespoons Satya Chaat Party Spice Blend and ½ tablespoons Kosher Salt. Shake to coat. - Spread the seasoned Pumpkin cubes out on the lined baking sheet. Roast them at 400°F for 25 – 30 minutes or until the edges just begin to crisp up and lightly caramelize.
- Pour 1 cup Pecans and ½ cup Pepitas into a dry sauté pan and toast them over medium high heat until they just turn fragrant (about 3 – 4 minutes). Remove from the heat immediately and set them aside.1 cup Pecans, ½ cup Pepitas
- Crumble 8 ounces Goat Cheese and set it aside.8 ounces Goat Cheese
- In a large serving bowl, combine 16 ounces Spring Mix Lettuce, the Pumpkin cubes, 8 ounces Goat Cheese (crumbled), 1 cup Pecans (toasted), and ½ cup Pepitas (toasted). I like to make sure everything gets a fairly even distribution to minimize mixing required by the guests.16 ounces Spring Mix Lettuce
