Blue Cheese Cream Filled Puffs

Elegant and savory, these Blue Cheese Cream Filled Puffs provide a fun twist on the idea of a cream puff.  They make a perfect little bite to start off a dinner party or enhance an hors d’oeuvres spread.  The fact that they are gluten free and low carb is just a bonus.

I may have a mild obsession with the idea of amuses bouches–those small bites served at the chef’s whim before the actual start of the meal.  Where my problem comes in is often portion control–a small bite.  However, with these Blue Cheese Cream Filled Puffs, I think I actually succeeded at creating something appropriately sized.  The quantity you make is up to you.  If serving these as hors d’oeuvres, I suggest making the full batch.  They make great finger food. 

Accommodating Some Forms of Lactose Intolerance

They were designed with the ability to make a low lactose version based on the cheese and cream cheese you choose.  

  • Blue Cheese – You can pick your blue family cheese of choice.  To accommodate some forms of lactose intolerance, you can use a sheep milk Roquefort in place of the blue cheese.  If you’re looking for a bit less bite, you could swap in a gorgonzola.  
  • Cream Cheese – For the cream cheese, you can either use regular cream cheese or a plant-based spread (e.g. vegan cream cheese).

Blue Cheese Cream Filled Puffs

Elegant and savory, these Blue Cheese Cream Filled Puffs provide a fun twist on the idea of a cream puff.  They make a perfect little bite to start off a dinner party or enhance an hors d’oeuvres spread and happen to be gluten free and low carb.

Ingredients

For the Parmesan Puffs:

  • ½ cup Unsweetened Almond Milk
  • ¼ cup Unsalted Butter
  • 1 cup Dinner Party Diaries Original Baking Mix
  • 2 Eggs Jumbo
  • ¾ cup Parmesan Cheese Grated

For the Blue Cheese Cream Filling:

  • 4 ounces Blue Cheese or Sheep Milk Roquefort
  • 4 ounces Cream Cheese Softened. Or Plant-based Spread
  • Additional Unsweetened Almond Milk Or Chicken Stock. Only if needed to thin out the sauce.

Instructions

For the Parmesan Puffs:

  • Line a rimmed baking sheet with parchment paper and spray with nonstick cooking spray. Preheat the oven to 375°F.
  • In a small saucepan (1.5 quart), heat ½ cup Unsweetened Almond Milk and ¼ cup Unsalted Butter to boiling. Stir in 1 cup Dinner Party Diaries Original Baking Mix and reduce the heat to low. Stir vigorously for about 1 minute or until the mixture forms a ball. Then remove it from the heat.
    ½ cup Unsweetened Almond Milk, ¼ cup Unsalted Butter, 1 cup Dinner Party Diaries Original Baking Mix
  • Beat in 2 Eggs, one at a time. After each addition, beat until smooth. Then stir in ¾ cup Parmesan Cheese.
    2 Eggs, ¾ cup Parmesan Cheese
  • Spoon the dough by rounded teaspoons onto the prepared baking sheet. Place them approximately 2 inches apart.
  • Bake at 375°F for 15 minutes or until puffed and golden brown. Allow to cool completely.

For the Blue Cheese Cream Filling:

  • In the small bowl of a food processor, combine 4 ounces Blue Cheese with 4 ounces Cream Cheese (softened). Process until smooth.
    4 ounces Blue Cheese, 4 ounces Cream Cheese
  • Only if necessary, add Additional Unsweetened Almond Milk or stock to thin it out, in increments of ½ tablespoon at a time.

To Assemble:

  • Spoon into a pastry bag (or a zip top bag with a small slice removed from one bottom corner) fitted with a bismarck tip.
  • Using a sharp paring knife, make a small puncture on one side of each Parmesan Puff.
  • Using the bismarck tip, pipe the Blue Cheese Cream Filling into each Parmesan Puff.
