Simple and delicious, I seriously suggest trying these Chicken Caprese Skewers for your next dinner party or get together. You can dress them up with some pesto or just keep them simple as they are.
These Caprese Chicken Skewers are quick and easy to make. Plus, the way I make them, there’s no cooking involved. While you can definitely cook the chicken yourself, my intent for this recipe is to make it a fast and easy appetizer. It’s also simple enough to pose no issue for several dietary restrictions.
What You Need to Make Caprese Chicken Skewers
Equipment
- Cutting Board
- Chef’s Knife
- Medium Skewers – For larger Caprese Chicken Skewers
- Toothpicks – For mini Caprese Chicken Skewers
Ingredients
- Fresh Mozzarella Slices – I buy the 16 ounce packs that are pre-sliced.
- Chicken Breast – This is going to need to be cooked and cubed. So, I suggest buying pre-cooked chicken cubes or strips for this recipe.
- Grape Tomatoes
- Basil Leaves – I’ve started just buying the basil plants at the grocery store. I can’t keep them alive at home, but that way I get the quantity I need. Plus, at my store, they’re the same price as a package of picked basil. 🤷
Getting Started with Making Caprese Chicken Skewers
For the purposes of these instructions, I’m assuming that you bought pre-cooked chicken as listed in the recipe. If not, you’ll want to cube and cook the chicken before we get started.
Prepping the Ingredients for Assembly
To get the ingredients ready, we’ll start by taking the fresh mozzarella and cubing it. I buy the packs that are already sliced, so I just cut all of the slices into quarters.
If you can find the cubed pre-cooked chicken pieces, the you just need to open the package. If you can only find the strips, then you’ll need to cut those down into cubes that are roughly 1” by 1.5”.
As far as the basil leaves are concerned, I suggest picking them off of the stems at this point. That will streamline your assembly process.
Assembling the Caprese Chicken Skewers
I’ll offer you two options for assembling these Caprese Chicken Skewers. Which option you choose depends on how big of an appetizer you want to serve. I like the larger version for a heavy app set-up and the smaller version for situations in which there are a lot of other food options. The larger version is basically a double-size of the mini ones. For the larger version, I use medium length skewers. For the smaller version, I use toothpicks.
Lay out all of your ingredients and the skewers. Also make sure you have somewhere to put the assembled skewers. They should be stored in the fridge until you’re ready to serve them, so I suggest putting them in an airtight container with layers of wax paper in between them.
Larger Version Skewers (Option A)
To make the larger version, you’ll start by placing a chicken cube on the skewer, followed by a piece of the fresh mozzarella cheese, then a grape tomato. Then for the “center”, I add a basil leaf. If it’s large, I like to fold it in half. After that we’ll add another chicken cube, mozzarella piece, and grape tomato to finish off the skewer.
You’ll just repeat that process until you run out of ingredients.
Smaller Version Skewers (Option B)
For making the smaller version, you’ll start by placing a chicken cube on the toothpick, followed by a piece of the fresh mozzarella. Then you’ll add the basil leaf and finish it off with the grape tomato. I like to sandwich the basil leaf to keep it from sliding off.
You’ll want to store these in the refrigerator until you’re ready to put them out for your guests.

- 32 Basil Leaves
- 64 Grape Tomatoes
Instructions
- If the Fresh Mozzarella is not sliced, then cut it into 16 slices and then cut those slices into quarters. You should have 64 pieces when you’re done. Set them aside for your assembly line.16 ounces Fresh Mozzarella Slices
- Cut the cooked chicken into cubes that are roughly 1” by 1.5”. I buy the pre-cooked chicken slices and then cut those into the cube sizes that I need. Set them aside for your assembly line.1.5 pounds Chicken Breast

- (Option A) For 32 medium skewers, place your ingredients on a skewer as follows: 1 chicken cube, 1 piece of fresh mozzarella, 1 grape tomato, 1 basil leaf (if large, folded in half), 1 chicken cube, 1 piece of fresh mozzarella, and finally 1 more grape tomato. Repeat this process with the remaining skewers and ingredients. (Option B) Alternatively, for 64 small skewers or toothpicks, place your ingredients on a toothpick as follows: 1 chicken cube, 1 piece of fresh mozzarella, 1 basil leaf (if large, folded in half), and 1 grape tomato.16 ounces Fresh Mozzarella Slices, 1.5 pounds Chicken Breast, 32 Basil Leaves, 64 Grape Tomatoes
- Refrigerate until ready to serve.
