Pizza Masti Zucchini Roll-ups
Ingredients
- 4 pounds Zucchini Sliced into long ribbons, preferably with a mandolin
- 1.5 tablespoons Kosher Salt Plus more for sprinkling on the raw zucchini planks
- 3 pounds Ground Chicken
- 4.5 tablespoons Satya Pizza Masti Spice Blend
- 16 ounces Savory Plant-based Spread i.e. Vegan Burrata or Vegan Creamed Cheese
- 43.5 ounces Fire Roasted Diced Tomatoes Drained. 3 cans
- Nutritional Yeast Optional for topping
Instructions
- Line a rimmed baking sheet with heavy duty aluminum foil and paper towels.
- Using a mandolin, slice 4 pounds Zucchini lengthwise into evenly thick planks. Lay them out on the paper towel lined baking sheet and sprinkle with Kosher Salt. Add another layer of paper towels on top and repeat until all the zucchini are prepared. Allow to drain for approximately 30 minutes.4 pounds Zucchini, 1.5 tablespoons Kosher Salt
- In a large sauté pan over medium high heat, combine 3 pounds Ground Chicken, 4.5 tablespoons Satya Pizza Masti Spice Blend and 1.5 tablespoons Kosher Salt. Cook through. Remove to a paper towel lined plate to drain.3 pounds Ground Chicken, 4.5 tablespoons Satya Pizza Masti Spice Blend, 1.5 tablespoons Kosher Salt
- Drain 43.5 ounces Fire Roasted Diced Tomatoes and set aside.43.5 ounces Fire Roasted Diced Tomatoes
- Spray a 9×13-inch Casserole Dish with nonstick cooking spray. Preheat the oven to 350°F.
- Take the drained zucchini planks and spread them with the plant-based spread. Top with approximately 1.5 tablespoons of Ground Chicken and 1 tablespoon of Diced Tomatoes. Roll up each filled plank and set it on-end in the prepared baking dish. Repeat with the remaining zucchini slices and filling ingredients.16 ounces Savory Plant-based Spread
- Optionally sprinkle with Nutritional Yeast on top. Bake for 1 hour. Serve warm.Nutritional Yeast

Pro Tip: What do I mean about there being a time and place for roll-ups? Well, if you’re cooking for a crowd of 30, making enough zucchini roll-ups for everyone as an entrée (let’s assume 3-4 per person) adds up quickly. It’s way more efficient to make a zucchini lasagna instead–same ingredients but way less work.
