This hearty Ham, Veggie, and Chevre Scramble is packed with flavor and makes a great breakfast for a crowd. Made with a variety of veggies, this dish also has the added benefit of being easy to adapt to accommodate several dietary restrictions.
The Story
So . . . I had this great plan for my slumber party breakfast / brunch. I would make an egg strata and a French toast casserole. They’d be all put together and ready to just slip into the oven while everyone was just beginning to get up and around. It was an efficient, delicious plan.

There was a problem with my plan. My Chicken, Zucchini, and Mushroom Egg Strata; Keto Ham and Cheese Breakfast Strata; and Keto French Toast Casserole use keto bread which contains wheat and gluten. Those were distinctly not okay for at least one of my guests. Cool, so I’d pick a different breakfast casserole that also happened to satisfy keto, no tree nuts, no peanuts, no coconut, no soy, no wheat, no gluten, no buckwheat. The problem is that every breakfast casserole has some sort of “bulker” or “filler” or generally speaking something that provides heft and helps it all come together in a cohesive casserole. When you eliminate regular bread, keto bread (which is not wheat free), gluten-free bread (which is not keto friendly), all-purpose flour, almond flour, coconut flour, and hash browns; you are no longer making a casserole. You are making some form of egg scramble. To keep things interesting, I opted for a Ham, Veggie, and Chevre Breakfast Scramble.
All of the veggies, ham, and cheese were still fine for this application. So the answer was to prep as much as possible in advance and stash it in zip top bags in the fridge. Then the morning of, it was time to cook the mix-ins all up and add the eggs and cheese to finish.
Making a Ham Vegetable Breakfast Scramble
The one downside of using a lot of fresh vegetables is that it usually involves a good amount of chopping, slicing and dicing. This Ham, Veggie, and Chevre Breakfast Scramble is no different. However the good news is that most of your prep work can be done in advance. So with some planning, you can still get your prep work for this dish out of the way in advance so that you are not rushing around in the morning when you have guests.
Advanced Prep Version
Approach the prep for this dish in 3 parts:
- Chopping Vegetables & Ham
- Spices & Seasonings
- Eggs & Dairy
Start by chopping or cutting up all of your vegetables. This includes trimming the broccoli and cutting it into bite-size pieces, slicing the mushrooms, and chopping up the roasted red pepper strips from the jar. (If you buy the julienned ones, you have less chopping to do.) Store each vegetable separately in a zip top bag in the fridge.
Then dice up the ham, unless you bought diced ham. Store it in the fridge as well.
In a small bowl, mix you Kosher salt, ground black pepper, and chipotle powder. Set it aside.
In a large bowl beat 12 eggs, 1/2 cup sour cream, and 3/4 cup chevre. Once that is complete homogenous, stir in the salt, pepper, chipotle powder mix. Store in an airtight container in the fridge.
“Day Of” Approach
To make everything the morning / day of the meal, all of the chopping and mixing remains the same. The only difference is not pausing and storing items in the fridge.
Cooking Everything Up for the Ham Vegetable Breakfast Scramble
Heat the oil in a large sauté pan or skillet over medium high heat. Combine the broccoli, mushrooms, and roasted red peppers in the pan and cook until the mushrooms and broccoli are tender. About 10 – 15 minutes.
Add in the ham, draining it first if there is accumulated juice. Cook for another 2 – 3 minutes or until the ham is heated through.
Finally, pour in the egg, sour cream, and cheese mixture. Allow the egg to cook, stirring periodically.
Once done, top the Ham, Veggie, and Chevre Breakfast Scramble with a few extra crumbles of chevre if desired and serve warm.

Ham, Veggie, and Chevre Breakfast Scramble
Ingredients
- 4 cups Broccoli Florets Chopped into bite-sized pieces
- 16 ounces Baby Bella Mushrooms Sliced. White button mushrooms will work too.
- ½ cup Roasted Red Pepper Strips I used the ones in the jar that are already julienned.
- 1 pound Ham 16 ounces. Cubed or diced
- 2 – 3 tablespoons Avocado Oil or Olive Oil
- 12 Eggs
- ½ cup Sour Cream
- ¾ cup Chevre Goat Cheese
- 2 teaspoons Kosher Salt to taste
- 1 teaspoon Pepper to taste
- 1 teaspoon Chipotle Powder to taste
Instructions

- In a large sauté pan or skillet, heat 2 – 3 tablespoons Avocado Oil or Olive Oil over medium high heat. Add in your 4 cups Broccoli Florets, 16 ounces Baby Bella Mushrooms, and ½ cup Roasted Red Pepper Strips. Cook until the mushrooms and broccoli are tender. About 10 – 15 minutes.4 cups Broccoli Florets, 16 ounces Baby Bella Mushrooms, ½ cup Roasted Red Pepper Strips, 2 – 3 tablespoons Avocado Oil or Olive Oil
- While the veggies are cooking, beat your 12 Eggs in a large mixing bowl. Then beat in your ½ cup Sour Cream and ¾ cup Chevre until combined. Then stir in your 2 teaspoons Kosher Salt, 1 teaspoon Pepper, and 1 teaspoon Chipotle Powder.12 Eggs, ½ cup Sour Cream, ¾ cup Chevre, 2 teaspoons Kosher Salt, 1 teaspoon Pepper, 1 teaspoon Chipotle Powder
- Add your 1 pound Ham to the veggies and heat. About 2-3 minutes.1 pound Ham
- Pour your egg, sour cream, and cheese mixture into the pan with the veggies. Allow the egg to cook, stirring periodically.
- Serve immediately, perhaps with a few extra crumbles of goat cheese on top.
