When envisioning a cat themed dinner party for our Cat Boys’ First Birthday, I really wanted the dessert table to be fun and a bit over the top. This Keto Milk Bar offering Strawberry Almond Milk, Keto Chocolate Milk, and Vanilla Almond Milk was perfect. It’s easy to prep in advance and then just set up right before dessert time.
Try it any time you’re planning a cat themed or other novelty menu.

Getting Started with Setting Up Your Keto Milk Bar
Step one is honestly finding the carafes you plan to use for the Keto Milk Bar. I suggest choosing ones that are around 1 liter in volume and have a closable lid. If you already have such things on hand, great. If not, I would also recommend that you pick carafes you will be able to reuse in the future for things like juice bars, mimosa bars, etc.
Making the Pink Milk
The first thing I need to tell you is that this Strawberry Almond Milk is delicious. However, it tastes nothing like the Nesquik Strawberry Milk or “pink milk” you may remember from childhood. I just don’t want to mis-set your expectations on what you’re getting.
Start by rinsing 4 cups of strawberries, removing the stems and hulls and then chopping them into small pieces.
Dump the strawberries into a saucepan along with ¼ cup Water and ⅔ cup Powdered Allulose. You can use Powdered Erythritol instead if you prefer or if that’s what you have. I’ve started using allulose for my sweetened liquids because it does not recrystallize the way that erythritol does.
Cook the mixture over medium high heat until it starts to bubble and the liquid begins to thicken. For me, this took about 15 – 20 minutes. Remove it from the heat and allow the mixture to cool for 10 minutes.
Pour the sweetened strawberry sauce into a blender and turn it on, gradually increasing the speed until you hit the highest. Stop the blender and add 4 cups of Unsweetened Vanilla Almond Milk. Blend it again until smooth.
Pour the Strawberry Almond Milk through a fine mesh strainer into an airtight container. Store it in the refrigerator until you are ready to set up your Milk Bar.
Making the Keto Chocolate Milk
Next we’ll move on to making the Keto Chocolate Milk.
First we’ll heat ¾ cup of water in the microwave for 1.5 – 2 minutes. Sift 1/2 cup Unsweetened Cocoa Powder into a mixing bowl. Add the hot water and whisk to form a chocolate slurry.
Then add in 2 cups of Unsweetened Vanilla Almond Milk, 2 cups of Heavy Cream and ¾ cup Powdered Allulose (or Powdered Erythritol if you prefer). Whisk to fully combine. Pour into an airtight container and store in the fridge until you are ready to pour it into a carafe for your Keto Milk Bar.
Note about the Vanilla Almond Milk
There is nothing to do for this one other than pour 1 liter of Unsweetened Vanilla Almond Milk into one of the carafes when you are ready to set up your Keto Milk Bar.
Perhaps in the future, I’ll try a more adventurous third milk for my Milk Bar. Some ideas that come to mind are: Keto Caramel Coffee Almond Milk, Creamy Keto Vanilla Almond Milk, or Blueberry Almond Milk. If / when I try making them, I’ll update this post.
Setting It Up
Now that all of your milks are ready, all that’s left to do is to fill the carafes, set out some cute cups or glasses, and put out some form of signage so that people can see their Milk Bar options.
“Excuse me. I heard there was supposed to be a Milk Bar available, but it appears to be empty. You do realize this is unacceptable, don’t you?”
