I’ve been on a bit of a biscuit bake train lately, so it seemed like a good time to share this Cheesy Taco Casserole with you.  Flavorfully seasoned with a balanced blend of spices, the taco meat nestles in a bed of biscuit and cheese to make a filling dish perfect for a party, dinner, or brunch.  While perfect as a make-ahead entrée, this recipe also comes together quickly enough to be prepared day-of.

While this Cheesy Taco Casserole is based on taco flavors, feel free to swap out your protein, cheese type (just keep it melty), and spice blend.

Ingredients

  • 2 pounds Ground Beef
  • 1 cup Red Onion Approximately ½ Red Onion. Diced.
  • 14.5 ounces Petite Diced Tomatoes Drained. 1 can
  • 4 tablespoons Taco Seasoning Buy or make your own. See Recipe Notes for making your own.
  • 2 tablespoons Garlic Minced
  • 2 teaspoons Kosher Salt Or to taste
  • 2 tablespoons Avocado Oil Only if needed for cooking the beef and red onion
  • 8 Eggs Jumbo
  • 1.5 cups Dinner Party Diaries Original Baking Mix 169.5 grams // 6 ounces
  • 3 cups Mexican Cheese Blend Shredded. Divided: 2 cups in egg mixture, 1 cup on top before baking

Instructions

  • Preheat the oven to 375°F. Liberally coat a 9×13-inch baking dish with nonstick cooking spray.
  • In a large sauté pan, combine 2 pounds Ground Beef, 1 cup Red Onion (diced), 14.5 ounces Petite Diced Tomatoes, 4 tablespoons Taco Seasoning, 2 tablespoons Garlic (minced), and 2 teaspoons Kosher Salt (or to taste). Cook until the meat is browned and the onions are softened. Add up to 2 tablespoons Avocado Oil for cooking if the pan starts to dry out.
    2 pounds Ground Beef, 1 cup Red Onion, 14.5 ounces Petite Diced Tomatoes, 4 tablespoons Taco Seasoning, 2 tablespoons Garlic, 2 teaspoons Kosher Salt, 2 tablespoons Avocado Oil
  • Remove the meat mixture to a paper towel-lined plate.
  • In a large mixing bowl, beat 8 Eggs (jumbo) and 6 tablespoons Unsweetened Almond Milk. Once beaten, stir in 1.5 cups Dinner Party Diaries Original Baking Mix and whisk until fully incorporated. Then mix in 2/3 of the Mexican Cheese Blend (shredded).

  • Pour the egg and cheese mixture into the prepared baking dish. Then spread the meat mixture evenly over the top. Finish by sprinkling the remaining 1/3 of Mexican Cheese Blend over the top.

  • Bake at 375°F for 35 – 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

    • 1 tablespoon Ground Cinnamon
    • ½ tablespoon Paprika
    • 1 teaspoon Ground Chipotle
    • 1 teaspoon Aleppo Pepper
    • 1 teaspoon Ground Black Pepper
