As I’ve mentioned on many occasions, I am a huge fan of simple vegetable side dishes. This Broccoli Caesar Salad is one such recipe. It’s made with tender roasted broccoli, creamy Caesar dressing, a blend of shaved Parmesan, Asiago, and Romano cheeses, and some keto croutons. With a few simple ingredients and a short amount of time, you’ve got a side dish that tastes and looks delicious. It’s the perfect accompaniment to either a fancy dinner or a quick weeknight one.
What You Need to Make Broccoli Caesar Salad
Equipment
- Cutting Board – For trimming the broccoli and cutting it into bite-size pieces.
- Chef’s Knife – For trimming the broccoli and cutting it into bite-size pieces.
- Rimmed Baking Sheet
- Heavy Duty Aluminum Foil
- Gallon-sized Zip Top Bag
- Tongs – Or Salad Fork and Spoon or other utensils for tossing the salad
Ingredients
- Broccoli Florets – I buy the family sized bag at the store.
- Kosher Salt
- Ground Black Pepper
- Garlic Powder
- Avocado Oil – You can use Regular Olive Oil if you prefer.
- Keto Garlic Pepper Croutons – You can buy them if they are available at your store or just make them with this easy recipe.
- Caesar Dressing – Just pick your favorite kind (if you have one) at the store. You can make your own if you prefer, but I didn’t.
- Asiago Romano Parmesan Cheese Blend – You could use another hard, sharp shaved cheese blend or just Parmesan, depending on what’s available in your store. I like this blend and it’s usually available near me.
Getting Started with Making Broccoli Caesar Salad
This Broccoli Caesar Salad is pretty easy to make and doesn’t take long at all.
Preparing the Broccoli
First we’ll get started by trimming 32 ounces of Broccoli Florets into bite size pieces and placing them in a zip top bag. If you’re making a single serving of this recipe, a gallon-size bag will do. On the other hand, if you’re doubling it for a larger crowd, you’ll need a 2 gallon-size bag.
To the bag, we’ll add 1 teaspoon of Garlic Powder, 1 teaspoon of Ground Black Pepper, and 1 teaspoon of Kosher Salt. Then we’ll seal and shake the bag to get a good coating of the seasoning distributed. Then we can add 2 tablespoons of Avocado Oil to the bag, seal it again, and shake to coat.
Roasting the Broccoli
Now we’ll line a rimmed baking sheet with aluminum foil and preheat the oven to 425°F. You don’t technically have to line the baking sheet with foil, but I do so for easier cleanup. Then you can just spread out the broccoli on the baking sheet and roast it at 425°F for 15 to 20 minutes (depending on your desired level of browning).
Dressing and Serving the Broccoli Caesar Salad
Once it’s done, you’ll remove the broccoli from the oven, drizzle it with ½ cup of Caesar Dressing (or an amount to your taste), and toss it with tongs to distribute the dressing evenly.
Note: If you (or your guests) prefer, you can just leave the dressing, cheese, and croutons on the side and allow guests to assemble as they wish. I go whichever route works best for my audience on a given occasion.
Then you can move the broccoli to a serving dish and allow it to cool for about 10 minutes before topping and further tossing with 3 ounces of a shaved Asiago Romano Parmesan Cheese Blend and about 4 ounces of Keto Garlic Pepper Croutons. Serve at room temperature.

Ingredients

- Cube 8 ounces of Keto Bread into roughly 1-inch cubes and place them in a zip top bag.
- Add 2 teaspoons Garlic Powder and 1 teaspoon Ground Black Pepper (or to taste) to the bag, seal, and shake to coat.
- Drizzle approximately 3 tablespoons of Olive Oil (you can use Extra Virgin if you like) into the bag, 1 tablespoon at a time. Seal the bag and shake to coat between each addition.
- Spread the bread cubes on the lined rimmed baking sheet and bake at 250°F for 20 minutes. Then toss them and bake for another 20 minutes. They should be dried and firm.
