Garlic Roasted Broccolini

By now I suspect you know how much I like and appreciate side dishes that are simple yet flavorful.  While broccoli is one of my life long favorites, I like the slight difference of broccolini from time to time. This Garlic Roasted Broccolini is an incredibly simple yet delicious variation on that theme.  It is a versatile side that I like to serve with this Goat Cheese Drizzle for a little extra flavor punch.

What You Need to Make Garlic Roasted Broccolini

Equipment

  • Cutting Board – For trimming the ends of broccolini as needed.
  • Chef’s Knife – For trimming the ends of the broccolini as needed.
  • Gallon-Size Zip Top Bag
  • Measuring Spoons
  • Rimmed Baking Sheet
  • Heavy Duty Aluminum Foil – Optional, but it makes clean-up easier. 

Ingredients

  • Broccolini
  • Garlic Powder
  • Kosher Salt
  • Ground Black Pepper
  • Avocado Oil – Or regular olive oil, just no extra virgin olive oil (or anything else with a lower smoke point).  We’re roasting at 425°F, so whatever oil you’re using needs to be able to stand the heat. 

Getting Started with Making Garlic Roasted Broccolini

This Garlic Roasted Broccolini is incredibly easy, so we’ll jump right in.  If you plan to roast the broccolini right away, you can preheat the oven to 425° and line a rimmed baking sheet with heavy duty aluminum foil.  On the other hand, if you are preparing the broccolini in advance, you can just complete the seasoning step and then stash it in the fridge.  

Preparing the Broccolini

We’ll start by trimming the ends of 24 ounces of Broccolini.  To season the broccolini, we’ll place it in a zip top bag and sprinkle in 1 teaspoon of Garlic Powder, 1 teaspoon of Kosher Salt, and 1 teaspoon of Ground Black Pepper.  I seal the bag and shake it to coat the broccolini first.  Then I drizzle in 2 tablespoons of Avocado Oil, reseal the bag, and shake it again.  

Roasting the Garlic Broccolini

You’ll spread the seasoned and lightly oiled broccolini out on the lined rimmed baking sheet.  We’ll roast it at 425°F for 15 minutes.  It will just be starting to get a tiny bit of char on the tops.  

Serving Suggestions

This Garlic Roasted Broccolini is best served warm.  If you need to keep it warm until serving time, I recommend keeping it in the oven on Warm (170°F – 180°F).  To serve, I suggest making this Goat Cheese Drizzle and either lightly drizzling it on right before serving or placing it on the side with a small ladle.  An alternative is serving this with crumbled goat cheese.

Instructions

  • Preheat the oven to 425°F and line a rimmed baking sheet with heavy duty aluminum foil.
  • Trim the ends off 24 ounces Broccolini as needed and place them in a zip top bag.

  • Sprinkle in 1 teaspoon Garlic Powder, 1 teaspoon Kosher Salt, and 1 teaspoon Ground Black Pepper. Seal the bag and shake to coat.

  • Drizzle in 2 tablespoons Avocado Oil. Seal the bag and shake to coat.

  • Spread the Broccolini on the rimmed baking sheet and roast at 425° for 15 minutes.
  • Serve warm. Optionally serve with a Goat Cheese Drizzle or just goat cheese.
