Keto French Toast

I’ve always been a breakfast and brunch person.  However, even before keto times, I rarely ordered French toast when out to eat.  Honestly, I think it was the powdered sugar that always turned me off of it.  I know.  Me not wanting extra sugar is bizarre to say the least.  Making it at home, on the other hand, was just fine and fantastic.  I still feel that way; but now, this Keto French Toast is my go to base recipe for many a weekend brunch.

It’s a simple starting point, but I love to play with the flavors depending on my whim of the day.  It’s easy to whip up a batch for just two or a table full of people.  

What You Need to Make Keto French Toast

Equipment

  • Medium Mixing Bowl
  • Whisk
  • Measuring Cup
  • Measuring Spoon
  • Large Shallow Dish – I use a 9 x 13” casserole dish. 
  • Griddle – Either electric griddle or flat griddle pan.  I like to use the flat griddle plates for my Cuisinart Panini Press, because I find that the temperature control is pretty reliable and consistent. 

Ingredients

  • Keto Bread – I’ve tried many varieties.  Pick your favorite and / or whichever is available at a store near you.  However, I will caution you that different brands can have very different densities.  This will impact the amount of liquid they can absorb and how quickly they cook.  At the end of the day, the best advice I can give you is: to keep an eye on it as it cooks and adjust as needed. 
  • Heavy Cream
  • Eggs – I use jumbo eggs.
  • Vanilla Extract – See Recipe Notes for alternative flavor suggestions. I use Vanilla as my baseline, but I like to try new flavor combos all the time.  My advice is to start with a light hand on extracts and only increase it after you’ve tried it once.  Extracts are intentionally strong, so a little bit can go a long way fast.  Remember: you can’t take it out.  
  • Avocado Oil – This is a cooking medium for the griddle / pan.  You can use another fat if you prefer.  While I love the taste of butter for cooking French Toast, it has a lower smoke point and I’ve had one too many instances of a finicky griddle temp leading to burned butter.  
  • Optional Toppings for Serving:
    • Sugar Free Maple Syrup
    • Butter – Personally, I prefer salted butter for mine, but that’s just me.
    • Mixed Berries
    • Whipped Cream
    • Chopped Nuts

Getting Started with Making Keto French Toast

Note on Griddle vs. Stovetop and Pan

Before we start, I need to make a note on equipment.  I typically use an electric griddle for making waffles and pancakes.  You can certainly just use a large flat pan on the stovetop.  I have many, many times.  The reasons I like a griddle for this application are twofold: 

  1. It has a very small lip on each side rather than a multi-inch side that will get in my way when I’m flipping.  
  2. It (at least mine) has a temperature dial, so I can set the temp to a degree marker rather than the low to high dots of my stovetop.  

Okay, because we’re going to need our griddle to be hot and the prep time is short, we’ll kick things off by turning on the griddle and giving it a light dose of Avocado Oil.  

Making the Batter and Applying it to the Bread

While that’s getting hot, we’ll move on.  In a medium mixing bowl, we’ll whisk 1 cup of Heavy Cream and 2 Eggs (jumbo) until completely combined.  Then we’ll stir in 1 teaspoon of Vanilla Extract or whichever flavor combination you’re planning to use.  Take a look at the Recipe Notes section at the bottom of the recipe for alternative suggestions. 

Next we’ll lay 8 slices of Keto Bread into a large shallow dish. I usually use a 9×13-inch baking dish.  However, in that case, I have to double layer 2 of the slices because only 6 slices fit in a single layer.  That’s fine.  You need to make sure all the slices are fully coated.  The specifics of how you accomplish that end goal don’t have to be pretty.  

I pour half the egg and cream mixture over the bread slices.  Then, I flip the slices and pour the remaining mixture over them.  Using a spatula to spread the mixture evenly, I flip my slices a couple of times for even coating.  

Cooking the Keto French Toast

Once the griddle is hot (a tiny drop of water will sizzle), you’ll place a batch of coated bread slices on the surface and cook until just golden brown. This takes about 4 minutes on my griddle.  Flip the slices and cook until golden brown on the other side as well.

I can fit 4 slices on each side of my griddle.  On my old one, I only had one side and had to work in 2 batches.

Then you’ll remove the finished slices to a warm plate and cover with a tea towel or place in a warm oven until ready to serve.  Add a little additional Avocado Oil to the griddle if / as needed and cook the next batch. 

I suggest serving your Keto French Toast with some toppings such as butter, sugar free maple syrup, whipped cream, assorted berries, nuts, etc.

Notes

  • Alternative Flavors – Play around with whatever flavor suits your fancy. Here are some of my favorites:
    • Banana – Add 1 teaspoon Banana Extract and ½ teaspoon of Vanilla Extract
    • Cinnamon – Add ½ teaspoon Cinnamon Extract and 1 teaspoon of Vanilla Extract
    • Pineapple – Add 1 teaspoon Pineapple Extract
    • Apple Pie – Add 1 teaspoon Green Apple Extract and ½ teaspoon Baking Spice Blend
    • Latte – Add 1 teaspoon Almond Extract and ½ teaspoon Coffee Extract
  • Keto Bread Alternatives
    • I use store-bought keto bread because it suits my needs. You could also use your favorite regular bread, gluten free bread, or make your own low carb alternative.
