Part strata, part casserole, all delicious, this Keto Chicken Ham and Cheese Stuffing is a decadent blend of tender chicken, savory ham, and melted gruyere cheese with some Dijon mustard worked in for a touch of depth.
I’m always looking for some new variations on a stuffing, strata, or bread pudding theme. While I will tell you that Keto Chicken Ham and Cheese Stuffing was inspired by Chicken Cordon Bleu; the similarities pretty much stop once we get beyond the chicken, ham, and cheese concept. However, I’m quite happy with those ingredients, particularly when they get melded together with some egg, chicken broth, and heavy cream.
What You Need to Make Keto Chicken Ham and Cheese Stuffing

Ingredients
- Dried Keto Bread Cubes – Directions for how to make them are in the recipe. You can either make them as part of this recipe or make them ahead of time and store them in a zip top bag on the counter. See the Recipe Notes below if you’d prefer a non-store bought alternative.
- Cooked Chicken – You can buy the version that is already cooked and cubed from the freezer section or grab a rotisserie chicken and shred it. OR . . . if you want a slight variation, you can make this with turkey instead of chicken.
- Cooked Ham – The easiest version of this is to grab a package of diced ham from the grocery store. I’ve also actually used the meat from ham hocks in this recipe. That is also quite tasty. However, just be aware that ham hock meat is typically a bit saltier than your regular ham.
- Eggs – I almost always use Jumbo eggs, unless the store is out of them.
- Heavy Cream
- Chicken Stock or Broth – I recommend my Homemade Chicken+ Broth if you have the time and inclination.
- Dijon Mustard
- Ground Black Pepper
- Dried Ground Mustard
- Grated Parmesan Cheese
- Shredded Gruyère Cheese
Getting Started with Making Keto Chicken Ham and Cheese Stuffing
Drying the Keto Bread Crumbs
If you’ve followed along with any of my other stuffings, stratas, or bread puddings, you can probably guess what needs to be done first. We’ll start by taking 12 ounces of Keto Bread and slicing it into cubes–16 cubes per slice. For me, 12 ounces usually comes from about 12 slices. Important Note: This weight is measured before drying them out. You’ll want to set the oven to 250°F and place the bread cubes on a rimmed baking sheet. You’ll toast them in the oven for 20 minutes, take them out to toss, and then put them back in the oven for another 20 minutes.
After that, you can just set them aside or store them in a zip top bag on the counter until you’re ready to use them. Personally, I like to just make a bunch of keto bread cubes in advance to have on hand.
Preparing the Mix-ins
To keep things simple and easy, this recipe calls for chicken and ham that are already cooked. Of course, if you want to make either of those from scratch, that will definitely work too but just take more time. Either way, we’re going to dice 12 ounces of Cooked Chicken and 4 ounces of Cooked Ham into cubes.
Shortcut Tips:
- To save time, you could buy a rotisserie chicken and shred it or a frozen package of cooked chicken cubes and thaw them.
- Likewise, you can just buy the diced or cubed ham from the refrigerator section of the grocery store.
To streamline the assembly process, you should also measure out 8 ounces of Gruyere Cheese and 2 ounces of Parmesan Cheese. If you either can’t find it pre-shredded or prefer to shred your own, you’ll want to shred the cheese now.
Assembling the Keto Chicken Ham and Cheese Stuffing
In either a stand mixer or a large mixing bowl with a hand mixer, you’ll combine 1 cup of Heavy Cream, 1 cup of Chicken Broth or Stock, 2 Eggs (jumbo), 1 tablespoon of Dijon Mustard, 1 teaspoon of Ground Black Pepper, and ½ teaspoon of Ground Mustard. We’ll mix until everything is thoroughly combined. Then you can mix in both the Gruyere and Parmesan Cheeses.
Now we’re ready to fold in ¾ pound of diced and cooked Chicken and ¼ pound of diced and cooked Ham, followed by the dried Keto Bread Cubes. You want to make sure that all of the bread cubes are well coated.
Then you can liberally grease a 9×13-inch casserole dish with nonstick cooking spray and pour in the stuffing mixture. It should rest in the refrigerator for at least 8 hours or overnight.
Baking the Keto Chicken Ham and Cheese Stuffing
You should take the casserole dish out of the refrigerator at least 30 minutes before you want to bake it and preheat the oven to 325°F.
You’ll bake the Keto Chicken Ham and Cheese Stuffing for an hour. However, after the first 40 minutes, we’ll cover it with aluminum foil and then bake it for another 20 minutes or until cooked through. A toothpick inserted into the center should come out clean.
Serve warm.

Keto Chicken Ham and Cheese Stuffing
Ingredients
For the Keto Bread Cubes:
- 12 ounces Keto Bread Cubed and Dried
For the Stuffing:
- 2 Eggs
- 1 cup Heavy Cream
- 1 cup Chicken Stock or Broth I suggest my Homemade Chicken+ Broth.
- 1 tablespoon Dijon Mustard
- 1 teaspoon Ground Black Pepper
- ½ teaspoon Dry Mustard
- 8 ounces Gruyere Shredded
- 2 ounces Parmesan Grated or shredded
- ¾ pound Chicken Cooked and Diced. 12 ounces
- ¼ pound Ham Cooked and Diced. 4 ounces
- 12 ounces Keto Bread Cubes as noted above
Instructions
For the Keto Bread Cubes (See Recipe Notes for Alternative):
- Preheat the oven to 250°F and line a rimmed baking sheet with aluminum foil. Cut 12 ounces Keto Bread into cubes. For me, this is usually 12 slices of keto bread. Place the cubes on the rimmed baking sheet, toast in the oven for 20 minutes, toss, and then toast them for 20 more minutes. Set them aside.12 ounces Keto Bread
Making the Stuffing:
- Using a stand mixer or large bowl and hand mixer, beat 2 Eggs (jumbo), 1 cup Heavy Cream, 1 cup Chicken Stock or Broth, 1 tablespoon Dijon Mustard, 1 teaspoon Ground Black Pepper, and 1/2 teaspoon Dry Mustard. Mix until thoroughly combined.2 Eggs, 1 cup Heavy Cream, 1 cup Chicken Stock or Broth, 1 tablespoon Dijon Mustard, 1 teaspoon Ground Black Pepper, 1/2 teaspoon Dry Mustard
- Add in 8 ounces Gruyere (shredded) and 2 ounces Parmesan (grated or shredded) and stir to combine.2 ounces Parmesan, 8 ounces Gruyere
- Fold in ¾ pound Chicken (cooked and diced), ¼ pound Ham (cooked and diced), and the dried Keto Bread Cubes. Make sure everything is evenly distributed and coated.¾ pound Chicken, ¼ pound Ham, 12 ounces Keto Bread Cubes
- Grease a 9×13-inch casserole dish with nonstick cooking spray and pour in the mixture.
- Refrigerate for at least 8 hours or overnight.
- Remove the casserole dish from the refrigerator at least 30 minutes before baking and preheat the oven to 325°F.
- Bake at 325°F for 1 hour. After the first 40 minutes, cover the dish with aluminum foil and continue baking for the remaining 20 minutes or until cooked through. A toothpick inserted in the center should come out clean.
- Serve warm.
